Strawberry Pie
This easy Strawberry Pie recipe is sure to make you the hit of spring and summer potlucks, brunches, and BBQ's. 5 simple ingredients make the filling- sweet, fresh, and bursting with flavor. Using fresh fruit and making your own gel is so much tastier than using store bought.
If you have a homemade pie crust you can use that too. To keep it quick and simple I use a pre-made crust, I love the flavor of a shortbread pie crust with the strawberries. Its the perfect way to top off a warm weather meal on the patio or gathered round the table.
Strawberry Pie Ingredients
- 4 cups, Strawberries
- 1 cup, White Sugar
- 3 Tbsp, Cornstarch
- ½ cup, Water
- 1 Tbsp, Lemon Juice
- Pie Crust
- 1 Egg
Strawberry Pie Directions
- Whisk egg and brush pie crust, bake in oven set to 375° for 5 minutes.
- Slice half the strawberries, put the other half in a bowl and crust them well.
- Whisk cornstarch into water to dissolve.
- In a large saucepan over low heat combine cornstarch mixture, sugar, lemon juice, and crushed strawberries. Stir constantly until mixture thickens.
- Remove pan from heat and allow to cool, stir in sliced strawberries.
- Pour into baked crust.
- Chill until pie is set.
While this is simple to make, no one needs to know! Your friends and family will think you slaved for hours over this pie – so go ahead and enjoy the praise.
