Healthy Chicken Salad
As promised, I'm sharing another recipe I lived by during my main weight loss phase.
This is no-frills chicken salad. I'm not even sure where I found the recipe since it's been over 5 years I've been using it. I'm sure it was modified by something I found through Sparkpeople.
Healthy Chicken Salad Ingredients
- 2 cups, Cooked Chicken (diced or shredded)
- Mayo
- Sour Cream (could substitute yogurt)
- Lemon Juice
- Italian Seasoning
- Grapes
- Celery
- Almonds (slivered)
Mixing Instructions
Mix everything together. You don't want it to be super dry, so you may need to add more mayo or sour cream. If too wet add more chicken.
I love to eat this on WASA crackers. I always get the high fiber variety since you need lots of fiber everyday. It's really hard to get in a diet, in general. I was out of WASA crackers the day I mixed this together, so I opted for one slice of Aunt Millie's Fiber for Life bread (45 calories each – another weight-loss food staple).
