Creamy Cheesy Instant Pot Chicken – Keto Friendly!

Are you in the Instant Pot cult? :) You either love them or are terrified of cooking with one! I'm honestly not a spokesperson for all things Instant Pot because I work from home and don't need to quickly prepare dishes from frozen to mealtime in minutes. But, I know there are advantages to use them beyond that!

One of them is with this recipe. You can add everything to your Instant Pot and it will be done in less than 15 minutes. And it's good. Like REALLY good!

Another name I've seen used for this recipe is “Crack Chicken” when you add bacon to it. Because, well, anything with this much cheese (and cream cheese) and bacon is sort of addictive.

We didn't add the bacon to this recipe, but you certainly can. Trust me, it will be DELISH! But, more than cheese and bacon addictiveness, the ease of the recipe makes you want to keep it in your repertoire because it's super simple and fast. This working momma needs SIMPLE FAST RECIPES!

The other nice thing about this Instant Pot chicken recipe is that it is a Keto approved recipe. Just make sure you're using a homemade base for your ranch seasoning to ensure there aren't any extra ingredients that aren't Keto compliant.

You can substitute chicken thighs to increase your fats as well. I have always felt that chicken thighs were more flavorful anyway.

Creamy Cheesy Instant Pot Chicken Ingredients

  • 1-2 lb, Boneless Skinless Chicken Breast
  • (2) 1 oz packets, Ranch Seasoning
  • 8 oz block, Cream Cheese
  • 1/2 cup, Cheddar Cheese (shredded)
  • 1 cup, Chicken Broth
  • Salt & Pepper (to taste)

Creamy Cheesy Instant Pot Chicken Directions

  1. Place the chicken breast in the bottom of the instant pot and season with salt and pepper.
  2. Place the cream cheese, ranch seasoning and chicken broth over the top of the chicken breasts.
  3. Place the lid on the instant pot and press the manual setting.
  4. Set the timer to 10 minutes making sure the quick release valve is closed. Once the timer has gone off after cooking then do a quick release.
  5. Carefully open the lid. Remove the chicken and shred using a fork and knife.
  6. Place the chicken back into the instant pot and stir in the shredded cheese.

You can add more shredded cheese (and bacon) if desired to your dish. This goes great with noodles, or if you are following a Keto lifestyle, serve on top of a bed of (prepared) Cauliflower Rice.

The recipe makes 4-6 servings, and is great for leftovers!
