Once A Month Cooking Adventure: Muffins

OK, so my girlfriends at onceamonthmom.com really inspired me to do something to stretch my family's money – do some once a month cooking! If you haven't checked out their site yet, please do, there are so many resources to help you cook once a month and stretch your shopping dollar!!

I don't have the freezer space to do the full-blown once a month cook that Tricia and Cortney lay out (the March Menu is now up here). Our extra (third) freezer died and we have a quarter of a cow occupying the space in the small freezer so no room for the many meals until we get a new one (and when I get a cooking buddy). So, I decided to focus on something small that would help out family get by for breakfast…and, I made some muffins (and will do waffles this week) :-) This just goes to show you that you can do once a month cooking however it works for you.

So, I made the muffins from the February Menu. I actually had dinner (Upside Down Pizza) on the stove as I was mixing up the batter so I was multi-tasking (I got mad skillz like that :-). The batter smelled so good I wanted to lick the spoon! Well, I did actually get a lil lick of the batter that splatted up on my cheek :-). Anyhoo – as they were poured into my muffin pans:

And, the finished product cooled and into my freezer bags for at least 6 days of breakfast for our hungry clan! Well, Andon loves these so they may not last too long since I caught him moving the chair over to the stove and grabbing two – he was double fisting them! They are so good thawed out too – still moist and have the perfect flavor! I'm a believer, girls :-)

    I’ll have to try this when my Eggo’s run out. I got boxes of Eggo’s for 39 cents a month or two ago, so I practically bought out the store.

  3. I love freezer cooking! I used to do a marathon day of it and make enough meals to last a couple of months.
    My favorite recipes: beef stew, chili, or anything else that goes in the crockpot. You can freeze those in ziploc bags, dump the frozen contents into the crockpot, turn that puppy on and you’re set!
    This is my first visit to your site–very fun!

    Great job! I tend to make muffins, pancakes, waffles, etc… in bulk. Then when the kids are starving they can get a muffin out of the freezer. Very easy!

    I love the idea of freezer cooking breakfast items. I don’t always have the time or freezer space to do a month’s worth of dinners. However, I did just make a double batch of my chewy oatmeal raisin bars that the kids snack on. They’re super easy to make and I went ahead and froze most of them. I can pull enough out each morning for them to have later in the day for snacks.

  6. I freeze batches of pancakes, waffles, french toast, muffins, crockpot oatmeal, and mashed potatoes. Makes life easier, that’s for sure.

  9. Those muffins look yummy! I haven’t tried freezing muffins yet; just pancakes and chicken (but not together, lol!). I need a buddy for the once-a-month thing!

    Haha I think those girls are inspiring all of us :) I actually did a big freezer batch of Bee Rocks the other day – just doubled my usual filling recipe and doubled the dough, we had some for dinner and now I have 20-odd neatly wrapped pockets for the freezer! I’m planning on doubling the pizza dough when I do pizza night this week and making a batch of pepperoni hot pockets to add to the freezer….it’s not too bad if you just double what you’re already making!
