Easy No-Bake Cookies Recipe
Summer is all about grilling outside and cool treats, not heating up your house while you cook and making your air conditioner work harder. These yummy Easy No Bake Cookies are the perfect treats for any season! No heating up your oven to cook, but you still get a satisfying, cool, chocolately cookie!
Easy No Bake Cookies Ingredients
- 2 cups, Sugar
- ½ cup, Milk
- 1 tsp, Vanilla Extract
- 1 stick, Butter butter (1/2 cup)
- 3 cups, Rolled or Quick Oats
- 3 Tbsp, Unsweetened Cocoa Powder
Easy No Bake Cookies Directions
- In a large bowl, stir together the oats and the cocoa powder until the oats are coated. Set aside.
- In a saucepan on the stove, mix together the sugar, milk, vanilla extract, and butter over a medium heat. Constantly stir until the mixture begins to boil. Once it’s boiling, let it boil for one minute, still stirring constantly.
- After a minute, remove the mixture from heat and pour over the oat mixture. Stir an incorporate all the ingredients well. Let then entire mixture cool for a few minutes.
- Use a small tablespoon scoop to drop the cookies onto a piece of parchment paper. Let the cookies cool and set up for several hours before moving them into a storage container. Store in the refrigerator.
You can easily make these cookies gluten free by using gluten free oats. And you can use either rolled or quick oats, they will both give the cookies a slightly different texture. The quick oats will be softer and the rolled oats will have a hearty texture. Both work great so use whichever you happen to have on hand.
These cookies will last about a week in the fridge (if they make it that long!) and this recipe will make about 2 dozen cookies. You can also freeze these cookies if you don’t plan on eating them right away.
