These Ham & Potato pockets are just like a hot pocket only less expensive and healthier (without as many preservatives). So, when I saw the recipeon the April menu at Onceamonthmom.com, I thought I would give it another freezer cooking whirl :)
It really was quite simple. I estimate I spent around $8 to make 16 pockets, which is $.50 each. Not too bad! Plus, I'm saving time to prepare this when I'm in a time crunch for lunch. And, I'm hoping my hubs will take these to work too :) I did use Italian Cheese ONLY because I was out of Swiss. I think Swiss would taste much better, or possibly a Sharp Cheddar to give it a bite!
And, I've NEVER bought a ham like this before. There is an eye or something in the middle. Laugh all you want, but I think that's what it is and I had to cut around it. Is that what you're supposed to do?
