Ever have leftover mashed potatoes and you just don't feel like having the same food again? You can make them into potato-cakes! Here's how:
Using a pan on medium heat, melt 2 Tbsp butter on bottom of pan. Mold leftover mashed potatoes into hamburger-sized patties. Place in pan and cover. Cook about 7 minutes and then put another 2 Tbsp of butter in pan. Flip potato-cakes over and cook another 5-7 minutes. The ‘crust' of the potato-cake should be fully formed before flipping. Take out of pan and enjoy!
