Another Once A Month Cooking Adventure: I’m Makin’ Waffles

Last week, I shared my experience doing freezer muffins – they are delish and the boys absolutely love them! Well, this week, I wanted to share how I'm working a little more on my freezer cooking for breakfast. I made waffles (try to say that like Donkey did in Shrek, k??)!!!

Onceamonthmom.com had the waffle recipe listed in their February Menu. As you can see, I am S-L-O-W to do things since it is now March. But, nonetheless, I did them!!!! I even added some flaxseed in the batter! It was my first experience using flaxseed and they really didn't taste any different. My kids will never know the difference (insert Evil Motherly Laugh)!

Well, I realized my first problem was the fact that I didn't have a waffle maker. I went to several local stores and could not find a 4-waffle maker. So, where do I go? Amazon, of course!! I found this one and I purchased it (with gift cards I had earned through Swagbucks…HOLLA!!). I was so excited when I got it! Ah, how the excitement changes once you become a mother and wife!!

These were crazy simple to make! Here's some of my domestic magic in process:

And, here are my waffles bagged and already in the freezer!! I'm what you would call efficient :-)

I think I'm enjoying doing something each Tuesday. That seems to be the day where I'm all domestic and crap stuff. I'll see how much longer this mojo runs because I really am enjoying it. Not sure if I'll get to something this week or not – I need to get caught up on my other domestic tasks (blargh) so we'll see. But, knowing that my kids have healthy (and affordable) options for breakfast makes it worthwhile!

  2. Your waffles are beautiful! I had to chuckle over the waffle iron excitement — this past Christmas my husband (as a joke) bought toast tongs for one of my gifts. We’ve commented several times over how excited I was over a $2 stocking stuffer — but, hands down, my favorite gift this past year.

    Did you use the recipe on Once A Month Mom? I didn’t see the blueberries….I would rather make it without blueberries. Did you just take them out and put the flaxseed in? I want to take out the blueberries and put the flaxseed in, but I don’t want to ruin the recipe. Tell me your tricks! I have never tried bulk cooking before, but I have often wanted to try frozen waffles, seems easy enough. Thanks!

  4. Nice job! And nice waffle maker. Free always makes everything so much better! I am so proud of you! I personally can’t wait to make the chocolate chip raspberry pancakes today (on March’s menu). I’ll let you know how it goes.

    HeatherMama – funny! Girl, I went and will continue with my domestic bad self!! LOL

    Rhonda – I know, it’s crazy! I was just googling over some new measuring cups. It’s crazy what makes us all excited! And, if something helps us save time, well that’s just over the top!!

    Kim – I did not add blueberries since I didn’t have any. I did ad 1/2 cup flaxseed into the batter and just stirred until it was blended completely. I also added a few tbsp of cinnamon. They actually taste really good without syrup. I’m going to try one with peanut butter for the added protein. Let me or the onceamonthmom girls know how they turn out!!

  6. WOW! That is great! I just froze 30 muffins yesterday – and some stuffed ww pitas (with egg, cheese, & sausage) for hubby. nutricious – delicious – and FAST!
    I was on a roll, and picked up a few Rib roasts on sale at S-Mart for $1.77/lb. I had them grind up some very lean burger meat, and thin slice one for marinade and steak sandwiches – pre-seasoned, and in the freezer they went! Love, Love, LOVE it!

    Loving it! That is how mine would look too…not perfect but they would still taste yummy! ;)

    Yummm…chocolate chip raspberry sounds delish! We even have frozen raspberries in our freezer from our raspberry bush! I will have to be on the look out for that! :)
