Baked Pumpkin Ingredients

  • 1 small pumpkin, sugar pumpkin is best 
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt 
  • ½ teaspoon freshly ground black pepper, optional **see notes

Baked Pumpkin Instructions

  1. Preheat oven to 400 degrees F
  2. Line cookie sheet with parchment paper
  3. Slice the pumpkin in half and clean out seeds
  4. Place on cookie sheet 
  5. Drizzle with olive oil and sprinkle with salt and pepper
  6. Flip pumpkin to cut side down
  7. Bake for 20-30 minutes or until pumpkin is soft with a fork (flip to cut side to test), depending on size of pumpkin  
  8. Cool completely
  9. Scoop out pumpkin 

Notes: 

Black pepper: you can omit the pepper if you are using the puree in a sweet dish 

Additional seasoning options: brown sugar, ground cinnamon, ground nutmeg and ground cloves
