Copycat Cracker Jack Popcorn Recipe
When was the last time that you enjoyed some Cracker Jack. This salty, sweet and nutty popcorn from yester year has been making a comeback.
Few facts about Cracker Jack…
Two German brothers by the name of Fred and Jack Reuckheim started making this delicable creation in 1871 to feed the people that were cleaning up after the Great Chicago Fire. Catching on very quickly, they decide to sell it at the Worlds Fair, and it took off. Everyone wanted the famous ‘Cracker Jack' (named by a fireman, who said they tasted like “cracker, Jack”. )
In 1912, the brothers started adding small prizes in the boxes and added the catch phrase “a prize in every box.”
Can any one guess what contribution Fred Reuckheim's grandson had to do with the popcorn?
Below is a recipe that I thought tasted almost identical to Cracker Jack.
Copycat Cracker Jack Popcorn Ingredients
- 1 bag, Microwave Popcorn (popped)
- 1 cup, Sugar
- 3 tbsp, Darn Corn Syrup
- 2 tbsp, Molasses
- 2 tsp, Peanut Oil or Canola
- Kosher Salt
- 1/2 cup, Peanuts (optional)
Copycat Cracker Jack Popcorn Baking Instructions
{Step 1} Lightly oil baking sheet.
{Step 2} In a heavy bottom saucepan, add sugar, corn syrup, molasses, oil, salt and peanuts.
{Step 3} Stir over medium heat until candy thermometer registers 250 or soft ball stage (about 8 minutes).
{Step 4} Place popped popcorn in large bowl and pour the mixture over it and stir.
{Step 5} Transfer the popcorn to the greased baking sheet and let cool.
