Breakfast Burritos

These tasty and hearty breakfast burritos make a great start to the day for kids and parents alike. With a wide variety of choices for fillings they can be custom made to satisfy each family member.
There are many types of tortillas available, or you can even make your own. Make up a big batch because they are a perfect stock up freezer item. Working in an assembly line fashion to fill and to bag, you will have a stockpile made up in no time. Include your kids in the preparation and you may be surprised how adventurous they are in choosing ingredients when they are part of the process.
Breakfast Burritos Ingredients
- 8 tortillas
- 10 large eggs
- 8 oz, Shredded Cheese
Optional add ins; onions, green peppers, mushrooms, salsa, hash browns, or home fries.

- Preheat oven to 275. Lay tortillas out on a baking sheet. Bake for 1 minute.
- Whisk eggs with about ¼ cup of water, salt and pepper to taste.
- Cook bacon or sausage according to package directions and drain.
- If you are adding in vegetables sauté in pan with a small amount of oil until cooked thoroughly.
- Allow cooked ingredients to cool completely.
- Divide all ingredients evenly among tortillas.
- Fold the bottom and top of each tortilla over the filling. Then fold in each side tightly.
If freezing, place in a freezer safe Ziploc bag and label with ingredients and date. Pull from freezer the night before and place in refrigerator to thaw. To reheat in the morning, microwave for 30 seconds at a time until warm throughout.
