Baked Pumpkin Ingredients
- 1 small pumpkin, sugar pumpkin is best
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper, optional **see notes
Baked Pumpkin Instructions
- Preheat oven to 400 degrees F
- Line cookie sheet with parchment paper
- Slice the pumpkin in half and clean out seeds
- Place on cookie sheet
- Drizzle with olive oil and sprinkle with salt and pepper
- Flip pumpkin to cut side down
- Bake for 20-30 minutes or until pumpkin is soft with a fork (flip to cut side to test), depending on size of pumpkin
- Cool completely
- Scoop out pumpkin
Notes:
Black pepper: you can omit the pepper if you are using the puree in a sweet dish
Additional seasoning options: brown sugar, ground cinnamon, ground nutmeg and ground cloves
