What to do with all the Zucchini?

The following Everyday Savings Tip comes from, Lisa:

Make it easy and quick… and freeze it! Scrub your zucchini, shred (using a food processor or your hands), line a colander or strainer with a clean dish towel and dump it all in. Grab the two ends of the towel, twist and squeeze and wring all the moisture/juice out. Measure into 2 cup increments and put in freezer bags and voila!

Mid winter soups, breads, muffins, meatloaf and more are easy to make with the freshness of summer!
