Slice the jalapeno down the middle removing all the seeds as this is where the majority of the heat is (if you want to leave a little in for heat, go ahead). Slice them into thin strips about 1/4” wide and dice the strips in the opposite direction. We are going to put everything into the processor so this can be a rough chop.
Dice onion, and garlic. Finely chop cilantro.
Now put your tomatoes in your food chopper, processor, or blender and pulse until you have reached your desired consistency. You can also chop by hand.
Stir remaining ingredients together until well combined, store in an airtight container, and refrigerate.
