Forget the take-out. Make your own Chinese Fried Rice with this copycat recipe.

- 1 tbsp, Vegetable Oil
- 2 cups, Minute White (Brown) Rice (uncooked)
- 2 eggs, slightly beaten
- 1 cup, Chicken Broth
- 1 cup, Frozen Vegetables (peas and carrots)
- 3 tbsp, Soy Sauce
- 1 cup, Cooked Chicken
- Heat oil in large skillet over medium heat.
- Add Minute Rice and brown slightly.
- Add eggs and scramble until cooked through.
- Add broth, vegetables, and soy sauce to the skillet and bring to a boil.
- Remove from heat and let stand for 5 minutes.
