Here's what we're having for dinner this week. What's on your plan?
Monday: Ham, Mashed Potatoes, Corn & Homemade Bread
It's a cloudy cool day and this meal of comfort foods sounds perfect. (It went fro 100 degrees on Saturday to 70 today. Crazy!) I've never cooked a whole ham before but I'm going to give it a try today.
Tuesday: Shredded Chicken Tacos
Another soccer/karate night in our house! Instead of eating dinner in shifts, last week we decided to have a late dinner after everyone was home. Tacos will be easy to do the same this week. The shredded chicken is in freezer. All the toppings can be diced and ready earlier in the day before the running starts.
Wednesday: Delicious Ham & Potato Soup
Cooler weather and the ham from Monday's dinner made me think of this yummy super easy soup. Everyone in the house loves it. Top it with cheese, bacon bits, sour cream and/or green onions!
Thursday: Grilled BBQ Pork Chops, Broccoli & Rice
Boneless Pork Loin is on sale for $1.99/lb at Kroger this week. I like to have the butcher slice part of one into chops and leave the other half in a roast. That way we can have 2 different pork meals from one pork loin.
I made caramelized onions to go with our date night steak dinner last week. The smell of them reminded me of this meal and I knew it had to go on this week's menu plan.
We'll see what the refrigerator holds on Saturday. Will there be leftovers or not is a question that I never know the answer guess. I'm sure there will be ham and I'll have bread dough in the fridge from Monday nights dinner. So sandwiches will be the back up plan if my boys are big eaters throughout the week.
Sunday: Homemade Pizza
My middle son asked me to take a break from homemade pizza for a little while and then asked a few days later “When are we going to have pizza again?” Hmmmm …. so here it is spaced out a little since the last time we had it.
