Menu Plan Monday | September 12

This week needs to go slow so I can get my To Do list completed … but I can't wait for Friday to get here!  I am taking a 4 night trip to the beach with 6 grade/high school friends.  That's right!  No kids, no husbands, just girl time!!  I've planned meals for Monday-Thursday.  My boys (kids and my hubby) have a list of meals for which the ingredients are on hand.  What they choose to eat when is all up to them!

Here's what we're having for dinner this week. What's on your plan?

Monday: Grilled Teriyaki Chicken, Roasted Broccoli & Rice

I can't even remember why but this meal didn't happen last week.  Whatever the reason the chicken is still in my freezer and the broccoli is in the fridge so they are on this week's plan instead.

Tuesday:  Green Beans, Sausage & Potatoes

My mom made this meal often when I was a kid.  I made it often for awhile and then it seemed that we made it too often.  It's been awhile now and smoked sausage was on sale last week so it's on this week's plan.

Wednesday: Breakfast for Dinner

Do you find things in the back of your freezer that you forgot were there?  You do if you are like me!  I just found a whole bag of blueberries hiding in the back corner of mine.  The first thing that came to mind was Blueberry Pancakes! Yum!

Thursday: Roasted Pork Loin, Fresh Green Beans & Buttered Noodles

2 cans of cream of mushroom soup, 1 packet of onion soup mix, a handful of fresh basil chopped and a boneless pork loin in the crock pot equals a very easy dinner!  I have a 5 pound pork loin which will be too much for one meal.  The leftover will be shredded for the boys to have on sandwiches while I am gone.

Meals for my family while I'm relaxing on the beach:

  • Stuffed Baked Potatoes
  • Grilled Panini Sandwiches
  • Shredded BBQ Pork Sandwiches
  • Chicken Fajitas

Next week's menu plan will either be late or not posted at all! It all depends on how chaotic things are when I get back.  Have a great week!!

    I love reading your weekly meal plans. I make a weekly menu as well, I just started about 2 months ago and am so glad I did, it makes dinner so easy. I always stressed about dinner before and each day I would be thinking “what am I going to make for dinner? What am I going to make for dinner??” For some reason I didn’t think I would be able to stick to it but now I can’t imagine NOT making a meal plan each week! Thanks for all your hard work, enjoy your vacation and be safe :)

      Thanks so much Stephanie!! I also didn’t know if I would stick to menu planning either. It’s been almost 2 years for me and it is definitely a habit now. It makes our after school time so much easier!
