Menu Plan Monday | March 28th

My kids are home on Spring Break this week. That means the week will include play time and probably some spur of the moment changes in plans.  I purposely chose pretty easy meals for the week hoping that we will stick to the plan on some level.  We'll see what happens though….

Monday: Spaghetti & Salad

I made spaghetti sauce several weeks ago after finding ground beef reduced to just $1.50 a pound at Jungle Jim's.  It's in the freezer just waiting to be used.  The only prep for this dinner will be cooking the pasta and tossing a salad.

Tuesday: Dinner Out for Zachary's 12th Birthday

It doesn't seem possible that I have been a mom for 12 years!!  Zachary is a fun loving, easy going, very smart and caring boy.  I'm so proud to be his mom!  So far I think his pick for dinner is Steak ‘n Shake.  We'll see if that changes between now and Tuesday.

Wednesday: Black Bean Soup & Cheese Quesidillas

This meal didn't happen last week so here is it again.  We're all getting haircuts Wednesday afternoon.  Dinner will be super easy after we're finished.

Thursday: Stuffed Baked Potato Bar

It's easy to please everyone with Stuffed Baked Potatoes.  I'll set several ingredient choices out and let the boys top their own potato. Diced cooked chicken is in the freezer so it's one step easier when dinner time comes.  Other topping choices will be cheese, sour cream, sauteed mushrooms, salsa and whatever else is on hand and easy.

Friday: Dinner Out

We're just getting into baseball season.  Monday and Friday night practices mean we're busy already and games haven't even started yet.  Luckily only one of my boys is playing.  We're going to grab something easy before or after practice.

Saturday: Homemade Pizza

It's been several weeks since we've had homemade pizza.  I'm going to make a double batch of this no rise pizza dough and stick some in the freezer for the next time it's on my menu plan.

Sunday:  Corn & Sausage Chowder

2 of my 3 boys asked for this meal and the 3rd boy chimed in with “Yeah!” so here it is!  What are your favorite soup recipes?
