Menu Plan Monday | March 21st

This is the plan for dinners at our house this week. What's on your plan?

Monday: BBQ Pork Sandwiches, Veggies & Chips

This was on last week's menu but it didn't happen.  I was looking forward to trying it so here it is again. Do you have a favorite BBQ Pork recipe?

Tuesday: Black Bean Soup & Cheese Quesadillas

I have a favorite new recipe site, Dishes of Mrs Fish.  It happens to be written by a teacher at my son's school so knowing her makes it even more fun to read.  I tried her Black Bean Soup recipe recently.  It couldn't be easier to make and I was pleasantly surprised that something so easy could also be so good.

Wednesday: Tagliatelle with White Meat Sauce & Salad

Cooking once and eating twice makes me really happy!  I was able to freeze half of this sauce when I made it a while ago.  Now we can have it again with hardly any preparation. I'm planning to make the pasta on Wednesday but if time gets away from me then it'll be pasta from my stockpile instead.

Thursday:  Grilled Chicken, Brown Rice & Roasted Vegetables

This week's Kroger Deals include Boneless skinless chicken breasts priced at $1.79/pound. That is my stock up price.  I'm planning to make a few different marinades for future chicken dinners.  Not sure which one we will eat on Thursday.  Oven roasting is my new favorite way to prepare a mix of veggies.  A little olive oil, some garlic and salt & pepper and 1/2 hour or so in the oven … so tasty!

Friday: Breakfast for Dinner

We love a big breakfast but busy on the go schedules sometimes mean that breakfast for dinner is easier than well … breakfast at breakfast time.  I'm thinking fruit crepes with scrambled eggs and sausage.  What's your favorite breakfast food?

Saturday:  Night out at a Birthday Party

We're heading out for a birthday party on Saturday night so I won't be cooking.  Hoping there will be leftovers in the fridge for the boys dinner.

Sunday: Quick Chicken Cordon Bleu, Broccoli & Homemade Bread

Chicken Cordon Bleu is a favorite of my boys.  I've tried many recipes and this is the best one so far.  My hubby will be in charge of cooking since I will be spending the afternoon teaching a coupon class.
