Menu Plan Monday | March 14th

This is the plan for dinners at our house this week. What's on your plan?

Monday: Easy Tomato Florentine Soup

Do you have a list of recipes that you want to try but just haven't gotten around to yet?  Mine keeps growing.  I have a bag of spinach in my fridge that needs to be used soon.  Looks like a good reason to try this super easy soup recipe.

Tuesday: Corn-Sausage Chowder

Spring weather is almost here to stay. I love soups but rarely make them once the weather turns warmer.  I'm getting my fix in this week.  If you are looking for an easy but hearty soup to try this is one of my family's favorites!

Wednesday: Leftovers/Dinner Out

Wednesday may be a crazy busy day.  I'm hoping to have some leftover soup but if there isn't enough left we're going to grab something quick.  Steak N Shake maybe? My family is registered for their eClub.  We have Free Double Steak Burger coupon that came for our anniversary and a Free Jr Steakburger that Zack got for his birthday. Sounds like a pretty inexpensive meal!

Thursday: Corned Beef & Cabbage with Mashed Potatoes

Happy St Patrick's Day!!  Corned Beef usually goes on sale this time of year and that's no different this year.  It's $1.99/pound at Meijer this week.  My mouth is watering when I think of this dinner!

Friday: BBQ Pork Sandwiches, Veggies & Chips

Here's another recipe that has been sitting in my “to try” list.  What could be easier than a pork loin plus 2 other ingredients in the crock pot?  Boneless pork loins are $1.99/pound at  Kroger this week.  I'm going to buy one larger than we need for one meal.  Hoping there will be plenty of leftovers to freeze for a future dinner.

Saturday: Homemade Pizza

I'm going to be out numbered by 3 more boys on Saturday night.  My oldest is turning 12 later this month.  We're celebrating with the day at Coco Key Water Resort and a sleepover here.  Homemade pizza is always a hit with everyone.

Sunday: Steak Fajitas

I way overestimated how much Flank Steak I needed for my hubby's b-day dinner a few weeks ago.  The leftover steak is in the freezer.  It will be great sliced and sauteed with peppers & onions for Fajitas.
