Here's what we're having for dinner this week. What's on your plan?
Monday: Chuck Roast, Carrots & Potatoes
This meal didn't happen last night. The weather didn't cooperate for our “day by the pool” plans. The whole day turned out different than we planned. The evening was great though. We grilled out with friends and enjoyed a cool June evening outside.
Tuesday: Vegetable Pasta
Tuesday's are karate nights for my boys. Dinners need to be easy. I love to throw whatever veggies are in the fridge with a little olive oil and garlic into a skillet. Sauteed and served over pasta they make a great quick meal.
Wednesday: Chicken Curry, Grilled Vegetables & Birthday Cake!
Happy Birthday Mom! My sister & her hubby are wonderful cooks. They are making curry and bringing it here to celebrate my mom's birthday. I don't have much experience with curry but I'm looking forward to trying it.
Thursday: Breakfast for Dinner
Eggs, fried potatoes & biscuits, maybe? We'll just have to see what sounds good when it's time to make dinner. I love that most things we would make for breakfast (even at dinner time) are things that are usually in the fridge or pantry.
Friday: Homemade Pizza – Take 2
Last week's pizza didn't turn out like I wanted it to so I'm gonna try again. Fresh basil, Roma tomatoes & fresh mozzarella was the plan. I found the little mozzarella balls (you know the ones in a container filled with liquid) reduced at Meijer. Surely they could be sliced and used just like a block of fresh mozzarella, right? Wrong! I won't try that again.
Saturday: Cilantro Lime Chicken with Avocado Salsa
Sunday: Grilling Out with Friends
Hopefully the weather will cooperate this week. I really want a day by the pool. Not sure what the menu will include. I'm sure it will be something on the grill though!
