Menu Plan Monday | June 20th

Did you miss me last week?  It was the first week in over a year that I didn't do a menu plan, but I have a good excuse.

We spent the week at Santa Rosa Beach with my whole family …. all 15 of us!  It was a wonderful week!!  We made lots of memories, played, relaxed and ate lots of great food.  We went out for dinner most nights.  Obviously that means it wasn't a very frugal trip but you know the motto, right?  Save on what you need.  Spend on what you want.

Now it's time to get back into a routine, including planning our menu for the week.  I'm looking forward to cooking and eating at home!  Here's what we're having for dinner this week. What's on your plan?

Monday: Pork Tacos

I searched and searched my freezer for a bag of Pork Taco meat a few weeks ago.  I knew it was in there but didn't find it.  Guess what?  It really was in there.  Guess I need to organize the freezer!  I can already taste the homemade guac that I'm going to make to go with this meal.

Tuesday: Shredded Chicken Sandwiches, Cucumbers & Pretzels

Thanks to my friend Kym, my hubby and I get a night alone!  She invited all 3 of my boys for a sleepover.  They are having an easy dinner beforehand and we are going out.  Yes that kind of contradicts what I said above about looking forward to cooking doesn't it?  I'm not passing up the chance for a date night out though!

Wednesday: Chef Salad

While everything we ate last week was yummy, I can't say that it was all healthy.  But hey it was vacation right?  Something simple and light belongs on this week's plan.

Thursday: Chicken Marsala & Mashed Potatoes

Chicken Marsala was one of the two requests my hubby made for Father's Day dinner.  Since I had very little sleep on Saturday I opted for his other choice … steaks on the grill.  This dinner sounds good though plus I have chicken in the freezer and plenty of marsala wine from a great Meijer sale last month.

Friday: Homemade Pizza

We had some pretty great pizza while on vacation.  Fresh mozzarella, roma tomatoes & basil leaves.  I'm going to try to recreate it here at home.

Saturday: Fireworks Party

Summerbration is at Bridgewater Falls this week with events scheduled from Thursday – Saturday.  (more details to come)  A friend who live right across the street invited us for a cookout and a perfect spot to watch Saturday night's fireworks!

Sunday: Chuck Roast, Carrots & Potatoes

With no plans at all, I'm hoping to spend Sunday sitting by a pool recreating some vacation memories.  A slow roasted chuck roast is going to smell great when I come back inside!
