Menu Plan Monday | January 24th

This is the plan for dinners at our house this week. What's on your plan?

Monday: Cindy's Jambalaya

Have you ever stocked up on something and then gotten really tired of the dishes you use that item in?  Well that's where I'm at with  the smoked sausage that's in my freezer.  Once again All helped me out! I'm looking forward to trying this Jambalaya recipe with my own variations.  I don't have celery or shrimp so I'm going to omit them.

Tuesday: Indonesian Chicken Pita Pockets

I usually think of this dinner when we have a counter full of cucumbers from the garden. I hope our cucumber plants do better this year than they did last year. For now cucumbers from the store will have to do. When made this for the first time I thought that the peanut butter sounded strange.  If you're like me … try it anyway.  You won't be sorry!

Wednesday: Leftovers

I hate all of the wasted leftover that get lost in the back of my fridge.  It's time for me to be more mindful of the leftovers we have so they get eaten instead of thrown away.  Plus leftover make a super simple meal!

Thursday: Date Night at the Melting Pot

We haven't been to the Melting Pot since before we were married.  Their Double Date Night promotion was too good to pass up!  I'm looking forward to a great adults only evening with my hubby, my BFF and her hubby.  Not sure what the kids are having.  Probably grilled cheese sandwiches.  Have you seen the fantastic deal on Kraft American Cheese slices at Kroger this week??

Friday: Corn- Sausage Chowder

This is one of those family favorites that we make really often and then forget about for a while.  I can't remember the last time we had it.  It's a super simple but very tasty soup.  Jungle Jim's has Freshlike Cream Style Corn on sale for $.49 a can.  Since it's usually over $1 a can and very rarely goes on sale, I'll be stocking up this week.

Saturday: Homemade Pizza

This is a regular on my menu plans.  It's easy and versatile.  We make pizza with traditional red sauce and pepperoni, sometimes it's garlic and olive oil with veggies or another favorite is BBQ chicken.  Whatever we make is usually based on what's in the refrigerator and what sounds good.

Sunday: Tagliatelle with White Meat Sauce

One lazy Sunday afternoon, I sat under a blanket flipping through TV channels.  I stopped when I saw this recipe being prepared on a cooking show.  I knew right away that I HAD to try it!  I may even get ambitious enough to make the pasta too.   If you've ever made homemade pasta, leave a comment with tips please.
