Menu Plan Monday | August 22

It's Back to School Week!  All three of my boys start back on Tuesday.  It's going to be a busy week with school Open Houses and getting back into a school schedule routine.  Here's what we're having for dinner this week. What's on your plan?

Monday: Grilled Italian Sausage, Peppers & Onions

This meal didn't happen last week. A friend offered to watch our boys for a date night.  Of course we said “Yes, please!”

Tuesday: BLT's, Cucumbers & Pretzel

It's the first day of school!!  Tomatoes from our garden are starting to over take my kitchen counter. BLT's (minus the T or L for some) are a favorite of ours.  There's nothing like a BLT with a homegrown tomato.  Do you like your bread toasted or not for BLT's?

Wednesday: Tacos

Chicken or beef?  Not sure which we will have this week.  I know I will be adding some black beans though.

Thursday: Cilantro Lime Chicken with Tomato & Avocado Salad

Do you have any tips for keeping fresh Cilantro fresh?  I have some in the fridge and I know won't last long if I don't use it soon.  This is a very easy & fresh Summer time (or anytime) meal.

Friday: Hamburgers, Homemade French Fries & Corn on the Cob

Grilling out again this week!  I've made homemade french fries for friends lately.  Both raved about them.  If you haven't tried them yourself all I do is: cut potatoes into thin wedges, toss with olive oil, salt, pepper & paprika.  They bake at 450 for about 1/2 hour.  Bake them a little longer if you like them extra crispy like I do!

Saturday: Pesto Pasta with Veggies & Homemade Bread

I love having pesto “cubes” in the freezer.  Tossed with hot pasta & veggies it makes an easy flavorful dinner.  It's been awhile since I've made bread.  We'll see how hot it is on Saturday to see if I turn on the oven or skip it.

Sunday: Homemade Pizza

We're celebrating Dylan's Birthday with family Sunday afternoon.  I'm planning on pizza for dinner.  I can make 2 for just us or more if family sticks around for dinner.

    I recommend you do the cilantro chicken earlier in the week if you’re worried about the cilantro going bad. We have an herb keeper (the Pampered Chef) that actually will keep that cilantro and other herbs fresh longer. One customer tells me her cilantro stayed fresh for 13 days! For the BLT’s, definitely toast.
