Menu Plan Monday | April 4th

Spring Break is over and it's time to get back into school day routines at my house.  Here's what we're having for dinner this week.  What's on your plan?

Monday: Shredded BBQ Chicken Sandwiches, Pretzels & Veggies with Dip

We have 1 1/2 hours between the time I pick Logan up from play practice until Dylan has to be at baseball practice.  In that time, dinner and homework have to be accomplished.  It's for night's like this have I have things like shredded chicken in the freezer.

Tuesday: Dinner with Friends

Since our husbands will both be out on Tuesday evening, a friend suggested we get together for dinner with our kids.  Not sure yet if we are going to cook together or get take-out.

Wednesday: Grilled Teriyaki Chicken, Roasted Asparagus & Homemade Bread

Here's to hoping that the Spring like weather that we had on Sunday is here to stay!  I'm looking forward to grilling out.  The chicken is in the freezer already in the marinade.  Asparagus is just $1.29/pound this week a Jungle Jim's.

Thursday: Deep Dish Cheddar Chicken

Logan has been asked for this meal several times lately.  It's one of my favs too! Here it is on this week's plan.  I don't have enough chicken to double the recipe this week but I have done so before.  Prepare the recipe to just before the crescent rolls.  Fill a baggie with the chicken, cheese & broccoli mixture and pop it into the freezer.

Friday: Tacos

Ground Beef tacos with everyone's fixings of choice.  I'm looking forward to some homemade guacamole to go on mine!

Saturday: Homemade Calzones

Pepperoni, sausage, cheese and maybe some banana peppers.  Yum!  Of course we will have sauce on the side for dipping.

Sunday: Baptism Celebration

We will be spending the afternoon with friends celebrating their son's baptism.  Congratulations Thomas!!  With a mid-afternoon meal, there won't be any cooking going on at my house in the evening.
