Menu Plan Monday | May 9th

Here's what we're having for dinner this week. What's on your plan?

Monday: Grilled Pork Chops, Smoky and Cheesy Buttermilk Baked Mashed Potatoes, Broccoli

A make-up baseball game meant that this dinner didn't happen last week.  Pork chops are in the freezer and I still can't wait to try these potatoes!

Tuesday: Chicken Salad Sandwiches, Cucumbers & Carrots

It's finally going to be warm with some sun this week!  We're going to be running from karate to baseball practice.  Boneless skinless chicken breasts, tenderloin & thighs are just $1.89/lb at Kroger this week.  I'm going to make chicken salad early in the day and have an easy dinner.

Wednesday: Grilled Bratts & Metts, Fruit & Green Beans

It must be the week for the grilling.  I just noticed that this weeks menu has us using the grill 3 times.  It must be Spring!!

Thursday: Taco Bar

I'm hoping to find ground beef reduced at Jungle Jim's this week.  I want to make several meals worth of taco meat to go in my freezer for future dinners.

Friday: Hamburgers, Homemade French Fries, Corn on the Cob

We had this same dinner 2 weeks ago and here is it again.  I guess that means we enjoyed it then.  Hoping for sit on the deck and relax kind of evening.

Saturday: Dinner Out

We're doing something we've never done before … going to see the Cincinnati Rollergirls! I have no idea what to expect but it should be a fun night out with my whole family!  I'm sure that we will meet up for dinner beforehand.

Sunday: Cilantro Lime Chicken with Avocado Salsa

If you're looking for a new chicken recipe, you've gotta try this one!  Fresh cilantro, avocados and tomatoes make this a light meal.  I can't wait to make this with homegrown tomatoes later in the Summer.

    I just want to say I love reading your menu planning every week! I am pretty new to menu planning I’ve only been doing it about a month but it has been working out great! I kind of get my idea’s from what is on sale or just what sounds good. It has made my grocery shopping more focused and I spend less money buying things I don’t necessarily need. So far your meals are much more creative or “homemade” than mine but hopefully in the future I can start making mine a little more homemade opposed to the manwich, hamburger helper, etc., I use now!j

      Thanks so much for commenting Monica!! Stick with your menu planning. I’ve been doing it for over a year now and it really does make a difference in many ways … both financial and scheduling too! Plan meals that work for your family, “homemade” or not.
