Recipe Of The Week: Mini Bagel Pizzas

We love pizza at our house, like, seriously love it.  However, since we started doing Weight Watchers in January, we've cut down on our pizza consumption….until I discovered a healthy way to make pizza at our own house!

Of course you could make your own whole wheat crust and all of that, but for nights when you just don't want to take all the time to do that, this is a great (and quick!) go to recipe.

To get started, you'll need a cookie sheet, cutting board, and all your favorite pizza toppings.  You can customize this to add whatever you'd like, just remember if you do, it will change the nutritional information.

Ingredients

  • 1 – Package of 100% Whole Wheat Bagel Thins (we used Thomas' Brand)
  • 1 – Small Jar of Tomato Sauce (enough for 16 Tbsp)
  • 1- Package of Mushrooms, 8 oz
  • 1- Package of Hormel Turkey Pepperoni (you'll use 34 of the slices)
  • 2- Cups of Kraft Shredded Fat Free Cheese (we are Cheddar lovers, so that's what we used)
  • 1/2 Onion
  • 1 – Garlic Clove
  • 2 – Tbsp Mrs. Dash Italian Seasoning

Preparation

  1. Preheat oven to 350 Degrees
  2. Wash and Prep all your veggies – Dice the onions,  Slice pepperoni (if you like it small), Slice up the mushrooms
  3. Place Bagel Thins (opened and facing up) on greased cooking sheet (we use Pam to coat)
  4. Toast in oven for 10-15 minutes
  5. Remove from oven and get ready to add your toppings
  6. Place 1 Tbsp of Tomato Sauce on each open bagel
  7. Add mushroom, onion, and pepperoni evenly across the bagels
  8. Grate garlic clove evenly over all the bagels (or if you prefer to chop, sprinkle evenly across)
  9. Sprinkle Mrs. Dash evenly across all bagels
  10. Place cheese evenly on the bagels (about 1/8 cup each bagel half)
  11. Place back in oven for 15 minutes or until cheese is melted

This turned out very well and the kids even loved having it since they were able to pick and choose what they wanted on it!
