Crockpot Potato Soup

There are so many ways to make crockpot potato soup EASY! This recipe is one that we consider a “tried and true” recipe that never fails! I’ve even modified things with some shortcuts over the years and I’ll share those in a minute.

Ingredients

  • 8 medium Potatoes (cubed)
  • 1 Onion (finely chopped)
  • 1 quart, Chicken Broth
  • 1 lb, Bacon
  • 1 cup, Shredded Cheese
  • 1 cup, Half and Half
  • 1/4 cup, Butter
  • 1 tbsp, Garlic Powder
  • 1 tsp, Pepper
  • 2 tsp, Salt

Instructions

  1. Chop bacon into 1″ pieces and fry.
  2. Reserve a little of the bacon as a garnish.
  3. Add all items into the slow cooker and stir.
  4. Cook on low for 8 hours.
  5. Top with some shredded cheese, bacon crumbles, green onions and sour cream (optional)
