Crockpot Potato Soup

There are so many ways to make crockpot potato soup EASY! This recipe is one that we consider a “tried and true” recipe that never fails! I've even modified things with some shortcuts over the years and I'll share those in a minute.

Since Ohio is such a temperamental state, you never know if you'll need this in the morning when it hits the crockpot. Either way, whipping up a batch of this crockpot potato soup really is easy and always enjoyed by our crew. It's comfort in a bowl, and doesn't take you any time to prepare.

Crockpot Potato Soup with Real Potatoes

Yes, you heard that right, the REAL DEAL potatoes! :D I promise it's not hard AT ALL to make the recipe as-is in the photos and with the listed ingredients below you'll need:

  • 8 medium Potatoes (cubed)
  • 1 Onion (finely chopped)
  • 1 quart, Chicken Broth
  • 1 lb, Bacon
  • 1 cup, Shredded Cheese
  • 1 cup, Half and Half
  • 1/4 cup, Butter
  • 1 tbsp, Garlic Powder
  • 1 tsp, Pepper
  • 2 tsp, Salt

Easy Crockpot Potato Soup

OK, now the shortcut substitutions that work just as well if you want to try them!

  • Use a large bag (around 30 ounces) of shredded or cubed hash browns instead of potatoes.
  • Use the pre-chopped frozen onions (they're always in our freezer).
  • Instead of the half and half, you can use 2% milk, heavy cream, greek yogurt, sour cream or whatever creamy dairy you prefer.
  • Instead of cooking the bacon for this, bacon crumbles work just as well! We prefer the Costco/Kirkland brand of bacon crumbles.

Recipe for Slow Cooker Potato Soup

This recipe is a super easy recipe to prepare the morning of and have it nice and bubbly when you are ready to sit down for dinner!

  1. Chop bacon into 1″ pieces and fry.
  2. Reserve a little of the bacon as a garnish.
  3. Add all items into the slow cooker and stir.
  4. Cook on low for 8 hours.
  5. Top with some shredded cheese, bacon crumbles, green onions and sour cream (optional)

Cooking tip: the smaller you cube the potatoes, the quicker they will soften and cook.

I mentioned a few above that our crew likes, but it's really what your own preferences are. Here's a list:

  • Bacon Crumbles
  • Shredded Cheese
  • Sour Cream
  • Fresh Jalapenos

This potato soup recipe is truly rich, so we will go lighter on the sides for this and we usually always have them on hand for easy sides. Here's some ideas:
