Menu Plan Monday | Week of February 28th

This is the plan for dinners at our house this week. What’s on your plan?

Monday: Grilled Asian Chicken Salad

It’s warmer again!  A salad sounds good to me.  I just bought spinach at the Meijer 10 for 1o, Get the 11th Free sale.  The chicken strips are marinated in the freezer.

Tuesday: Beef Vegetable Soup

This seems to be my easy go-to dinner for crazy busy nights lately.  We will have 2 boys at karate and 1 has a tournament basketball game so we will be heading 2 different directions.  Soup is so easy to have ready and eat when we can squeeze dinner in.

Wednesday: Shepherd’s Pie

I spent one afternoon last week cooking a preparing lots for ground beef in various ways.  It all in my freezer and ready to make dinner time a step or 2 easier. (Details to come later this week.)  One thing I did was prepare the meat & veggies for Shepherds Pie.  Now all I have to do is make mashed potatoes and bake.

Thursday:  Pineapple Pork Chops, Brown Rice & Broccoli

My son was watching over my shoulder while I was looking through various blogs I read often.  It really bugs me when anyone watches over my shoulder while I’m on the computer but I guess this time I’m glad he was. The words Pineapple Pork Chops caught his eye.  I can’t wait to try this new to us dinner!

Friday: Dinner Out

I’ve mentioned eating sushi to my sister a few times lately.  She and her hubby love Ando Japanese Restaurant. They invited us to join them so she can (in her words) “teach me about sushi.” She knows that I’m a total sushi rookie and so far I’ve stuck to rolls only.  How brave will I be??

Saturday: Cheeseburgers, Homemade Fries & Veggies

Remember that ground beef I spent the day putting into the freezer?  Of course part of it is now in hamburger patties ready for Saturday night’s dinner.

Sunday:  Homemade Pizza

It’s been a few weeks since we’ve had this family favorite.  Guess we’ll see what’s in the fridge on Sunday and decide then just what kind of pizza it will be.

    Hope you liked the Pineapple Pork Chops! It’s one of my kids’ favorite meals, and I love it because it just takes a few minutes to get ready and so quick to cook.

      We loved them! I think that crushed pineapple will be a staple in my pantry from now on. What a tasty and easy dinner!
