Menu Plan Monday | February 7th

This is the plan for dinners at our house this week. What’s on your plan?

Monday: Leftover Beef Vegetable Soup, Homemade Bread

I didn’t realize how much soup I made on Friday until it was time to do the dishes.  At least half was still in the pan.  Leftovers were on last week’s menu for Saturday, but we were invited to a friend’s for dinner so… that means Beef Vegetable soup in on this weeks menu again!

Tuesday: Chipotle

You know the saying “membership has it’s privileges?” I’m not sure where that saying came from but here’s a case where it’s true! All GMV YMCA members are eligible to receive BOGO burritos and such at the Bridgewater Falls Chipotle on 2/8 from 4-10pm.  Yum ~ a barbacoa burrito bowl sounds awesome!

Wednesday: Chili Chicken (Not to be confused with chicken chili)

I love Sweet Chili Sauce.  I used All Recipes.com ingredient search to find recipes using it.  Chicken (or any meat really) with bones is just not my thing, so there are boneless skinless chicken breasts in my freezer with this 3 ingredient sauce already on them.  It’s a new to me recipe and I can’t wait to taste it!

Thursday: Spaghetti & Meatballs

Spaghetti & Meatballs is on the top of my boys favorite dinner list.  With meatballs already in the freezer this will be a super easy dinner! Do you ever hide veggies in your spaghetti sauce?  I do … but don’t tell my boys.

Friday: Homemade(or maybe takeout) Pizza

There will be 2 extra boys in my house for a sleepover on Friday night.  Sleepovers here almost always include pizza.  We’ve made pizza a lot lately but are also watching our “eating out” budget.  We’ll see by the end of the week whether I’ll be making or ordering pizza for this dinner.

Saturday: Corn & Sausage Chowder

My grocery trips in the last week included many additions to my stockpile.  Unfortunately those stock up trips didn’t include a lot of meat or main dish items.  The few ingredients in this soup are ones that I almost always have on hand.

Sunday:  Asian Chicken Stir Fry

Yes this was supposed to be last Sunday’s dinner.  Not sure how I totally forgot that it was Super Bowl Sunday.  We’re not really a football watching house but will take any excuse to get together with friends and eat plenty of yummy snacky foods.  Oh and watch commercials too!  Anyway that means that the Asian Chicken is still in my freezer so it’s the plan for this coming Sunday instead.
