Menu Plan Monday | February 14th

This is the plan for dinners at our house this week. What’s on your plan?

Monday: BBQ Pork Chops, Corn, Stuffing  **Happy Valentine’s Day**

Today’s warmer weather makes me want to grill out! Luckily the slim meat choices in my freezer include pork chops.  The corn we’re having went into my freezer last fall fresh from a friends dad’s farm.  Thanks Mr Groh!

Tuesday: Grilled Chicken Quesadillas, Homemade Guacamole with chips

My boys are each less picky than the brother just above them.  The oldest is the most picky and the youngest eats just about anything.  With Quesadillas everyone can choose their fillings …. cheese (of course), chicken, grilled peppers, onions, black beans and sour cream.  I’m hoping that Bridgett’s hubby will share his quesadilla tips.  Apparently, (according to her kids) he makes them the best!

Wednesday: Hamburgers, Homemade French Fries, Grilled Zucchini

We’re grilling out again!  Have I mentioned that I can’t wait for Spring?? Burgers are on my boys list of favorite meals.  We always have homemade french fries with them.  I slice potatoes (with the peel still on) into wedges. Toss them with olive oil, salt, pepper and paprika and bake them for about 1/2 hour or until browned.

Thursday: Crock Pot Beef Stroganoff, Noodles, Broccoli

This dinner couldn’t be easier! Cubed chuck roast, can of cream of mushroom soup and a packet of onion soup mix will go into the crock pot first thing in the morning.  Let it slow cook all day long.  Just about an hour or so before dinner I’ll add a couple of handfuls of quartered mushrooms.  Oh it smells so good all day long! Friday: Shredded BBQ Chicken Sandwiches, Pretzels, Veggies & Dip

Busy night means an easy dinner!  The chicken is in the freezer ready to be thawed, warmed and served.

Saturday: Date Night with friends at Maggiano’s Little Italy

I hope that you are as lucky as I am to still have close friends from grade school.  I’m looking forward to dinner out with 4 long-time friends and our hubby’s.  The boys are eating at each of their sleepovers so no cooking here that night!

Sunday: Chuck Roast, Carrots & Potatoes

My hubby just mentioned recently that it’s been awhile since we have had this favorite meal of mine.  I love the flavor of carrots and potatoes cooked right in the same pan with the chuck roast!
