Menu Plan Monday | December 27th

My kids and my hubby are home all week! We have lots of ideas for fun family days. It will be the kind of week where the menu plan will change as we are spontaneous with our days.

This in the plan for dinners at our house this week. What’s on your plan?

Monday: Star Wars Pancakes, Sausage Links & Fruit
By the time the gifts were opened on Christmas morning we had all snacked enough on Blueberry Cake and fruit that there was no need to make pancakes for breakfast.  Logan is very eager to try his new Star Wars pancake molds.

Tuesday: Vegetable Pasta & Homemade Artisan Bread
This will be angel hair pasta with a can of tomatoes and whatever veggies we have in the house.  A regular on my easy meal list!

Wednesday: Dinner at Dave & Buster’s
Dave & Buster’s is a fav of my kids. We have found that there are ways to stretch our money by going on Wednesdays.  I’ll share more about that tomorrow.

Thursday: Leftovers
Grandma (AKA my mom) is treating us to a night with the Harlem Globetrotters.  I’m hoping to have leftovers from a dinner earlier in the week so we will resist the temptation to eat out.

Friday: Appetizers for Dinner
We will be ringing in the new year with close friends.  I know better than to eat before we get together. There is always lots of yummy foods.  I’m looking forward to making Mushroom Turnovers.  These look close to something I remember my mom making years ago.  I’ll let you know how they turn out.

Saturday: Beef Vegetable Soup & Grilled Cheese Sandwiches
We don’t have any New Years day plans or traditions.  It will be a lazy day here with an easy dinner. I don’t follow any particular recipe ~ just browned ground beef, a can of tomatoes and a mixture of whatever vegetables I find in my fridge or freezer.

Sunday: Coq au Vin alla Italiana
I just made a list of some of our favorite dinners from past menu plans. It’s been months since we’ve had this and I’m not sure why because we all love it!!  I add plenty of mushrooms and serve it with mashed potatoes.
