Menu Plan Monday | April 25th

What a week this is going to be!  There are only 2 nights that have no plans.  Plus somehow I managed to spend 2 week’s worth of grocery money is just one week. I’m challenging myself to plan meals with only things I have on hand.  Here’s what we’re having for dinner this week. What’s on your plan?

Monday: Grilled Spiced Honey Lemon Chicken, Buttered Noodles and Asparagus

This is the last of my frozen marinaded chicken.  I’ll be watching for chicken breasts priced at my stock up price of $1.79/pound.  I love having marinaded chicken in the freezer. We’re having asparagus with the chicken this time since it’s what’s in the fridge.  If you like brussels sprouts (and even if you think you don’t) then you have to try this recipe.

Tuesday: Shredded BBQ Chicken Sandwiches, Veggies & Pretzels with dip

Does your household have evenings like this?  All 3 boys have karate from 5-6 pm and the youngest has baseball practice from 7-8 pm.  Dinner will be squeezed somewhere in the middle!

Wednesday: Breakfast for Dinner

Pumpkin Pancakes and scrambled eggs are one of our go to easy dinners. We love breakfast for dinner!

Thursday: Grilled Ham & Cheese Paninis & Corn

I have dinner plans so my boys (the 3 kids & my hubby) will be on their own! Grilled ham & cheese sandwiches on homemade bread are a hit with everyone!

Friday: Spinach, Ricotta & Tomato Calzones

Oh my goodness!  I happened upon this recipe a few weeks ago and knew that I had to try it.  I love that the dough is part whole wheat.  We loved them so much that they’re on this week’s meal plan.  I used fresh spinach the first time. I’m going have to try it with frozen spinach this time since it’s what I have.

Saturday: Dinner Out

We are headed out (w/o kids!!) to celebrate a friend’s birthday.  Hoping we have a break from the rain and get to be outside somewhere!!

Sunday: Family Birthday Party

My twin nephews are turning 5.  Not sure how that is possible already…time flies! Happy Birthday Max & Luke!!
