Menu Plan Monday | May 30th ~ The Late Edition

We had a wonderful and full long weekend filled with lots of fun.  My sister graduated from Med school.  My youngest had his last regular season baseball game.  We had family pictures taken with my whole family … all 15 of us!  And lots lots more!  I'm just now getting to this week's menu plan.  Better late than never, right? Here's what we're having for dinner this week. What's on your plan?

Monday: Dinner Out

After an afternoon at Boomerang Bay (with the other million and one people who went there too) we went to Champp's for $5.99 burgers.

Tuesday: Vegetable Pasta

This is one of those go to easy dinners that never turns out the same twice.  I have tomatoes, zucchini and spinach in the fridge that I'll cook together and mix with pasta, a little olive oil and garlic.

Wednesday: Chuck Roast, Carrots & Potatoes

This is one of my all time favorite meals.  The roast will be slow cooked with the carrots and potatoes added about an hour before we eat.  While it sounds really good, I'm wondering if it's a little crazy to have my oven on for hours though with the very warm weather that is predicted for us this week.

Thursday: Tacos

Summer Break officially starts today!  Ready or not the boys will be home for the Summer.  I'm sure if I asked what they wanted for a celebration dinner, I'd hear Tacos, Tacos & Tacos.  So tacos it is!

Friday: Leftovers

With any luck there will be enough leftovers from the last 3 nights dinners to have again on Friday.  It will all depend on my boys appetites though.  I never know just how much they will eat.

Saturday: Homemade Pizza

Not much to say about this dinner.  You see it here quite often.  Do you make pizza at home?

Sunday: Breakfast for Dinner

We have no plans for this weekend so we could have a big breakfast at the normal breakfast time.  Breakfast for dinner sounds better since it will only mean a mess in the kitchen once.
