Homemade Strawberry Pie

This easy Strawberry Pie recipe is sure to make you the hit of spring and summer potlucks, brunches, and BBQ’s. 5 simple ingredients make the filling- sweet, fresh, and bursting with flavor. Using fresh fruit and making your own gel is so much tastier than using store bought.

If you have a homemade pie crust you can use that too. To keep it quick and simple I use a pre-made crust, I love the flavor of a shortbread pie crust with the strawberries. Its the perfect way to top off a warm weather meal on the patio or gathered round the table.

Strawberry Pie Ingredients

  • 4 cups, Strawberries
  • 1 cup, White Sugar
  • 3 Tbsp, Cornstarch
  • ½ cup, Water
  • 1 Tbsp, Lemon Juice
  • Pie Crust
  • 1 Egg

Strawberry Pie Directions

  1. Whisk egg and brush pie crust, bake in oven set to 375° for 5 minutes.
  2. Slice half the strawberries, put the other half in a bowl and crust them well.
  3. Whisk cornstarch into water to dissolve.
  4. In a large saucepan over low heat combine cornstarch mixture, sugar, lemon juice, and crushed strawberries. Stir constantly until mixture thickens.
  5. Remove pan from heat and allow to cool, stir in sliced strawberries.
  6. Pour into baked crust.
  7. Chill until pie is set.

While this is simple to make, no one needs to know! Your friends and family will think you slaved for hours over this pie – so go ahead and enjoy the praise.
