Bacon Peanut Butter Caramel Popcorn Recipe

What do you get when you combine all of the greatest foods on the planet? You get one amazing snack food!

This treat has all the basic food groups: Bacon, Peanut Butter, Popcorn (salty) and if you are so inclined, a drizzle of melted chocolate as well. I believe this is Manna from Heaven for the woman with PMS or a pregnancy craving that can’t make up her mind what she wants. It’s all in one bowl and satisfies like no other snack can!

This concoction is not for the faint of heart. It is not even close to being healthy. This is in fact one of the most unhealthy snacks I have probably had in my lifetime. A little goes a long way. It is rich and oh so satisfying. As an occasional treat, this is an excellent choice. I hope you enjoy it!

Bacon Peanut Butter Caramel Corn Recipe

  • 4 – 6 cups, Popcorn (air popped)
  • 4-5 slices, Maple Cured Bacon (cooked, ranked and chopped)
  • 1 Tbsp, Crunchy Peanut Butter
  • 1 Tbsp, Vanilla Extract
  • ¼ cup, Chopped Peanuts (optional)
  • 1 cup, Packed Brown Sugar
  • ¼ cup, Bacon Grease
  • ¼ cup, Unsalted Butter
  • 1 tsp, Baking Soda
  • Melted Milk or Dark Chocolate for drizzle on top (optional)

Bacon Peanut Butter Caramel Corn Directions

  1. Preheat oven to 325 degrees.
  2. Spread air popped popcorn on cookie sheet. Set aside.
  3. In a heavy bottomed sauce pan, melt butter and bacon grease mixing in brown sugar. Bring to a boil and stir constantly for 5-6 minutes until it reaches soft ball stage. Use a candy thermometer or simply drop a tiny drop into cup of cold water to test and see if it forms a soft caramel ball. Remove from heat and stir in vanilla extract, baking soda, peanut butter and chopped bacon.
  4. Pour caramel sauce over popcorn and stir until all popcorn is coated well. Sprinkle top with additional peanuts if desired.
  5. Place in for 10-15 minutes to “crisp” and set. Remove from oven and cool.
  6. May drizzle top with melted milk or dark chocolate for extra taste.

Be prepared to fight your family for the last few pieces!
