Firecracker Fruit and Yogurt Popsicles Recipe

Red, White, and mmm…. These tasty, inexpensive treats for the 4th of July not only taste good but they are good for you! Fresh, sweet berries are high in vitamin c and antioxidants while the deliciously tart Greek yogurt contains more protein and less fat than American style yogurt.

Firecracker Fruit ‘n Yogurt Pop Ingredients

  • 1 ¼ cup plain Greek Yogurt
  • ¼ cup + 1 Tbsp. Granulated Sugar
  • 1 ¼ cup roughly chopped Strawberries
  • 1 ¼ cup Blueberries
  • 1 tsp. of Vanilla Extract
  •  8 Dixie Cups or Popsicle Molds (we own these).

Firecracker Fruit ‘n Yogurt Pop Directions

{Step 1} Begin by roughly chopping strawberries in a food processor or chopper.

{Step 2} Sprinkle 1 Tbsp. sugar over strawberries, set aside and allow to macerate (break down). Next, roughly chop blueberries, set aside.

{Step 3} Mix yogurt, remaining sugar and vanilla extract in a separate bowl.

{Step 4} Begin by spooning a small dollop of yogurt into cup. Alternate fruit and yogurt until cup is full.

{Step 5} Pop in a plastic spoon or popsicle stick and freeze for 3-4 hours.

Remove from freezer and gently squeeze, and pull from cup. This will make 8 servings.

Experiment with various flavor combinations such as: almond extract and peaches, chocolate extract and strawberries, coconut extract and mango, or orange extract and bananas.
