Recipe Of The Week: Crab Alfredo Pasta

I made this recipe this week for my family.  I have a huge affinity for Alfredo pastas, but as you know, it tends to be very high in fat and calories.  I made this version of “Alfredo” sauce using Weight Watchers Cheese Wedges.  These are very similar to The Laughing Cow, which are on sale this week at the Kroger Mega Sale!  This dish was very filling and is versatile as well.  You could substitute chicken instead of the crab, or even have it with no meat at all!

To get started, you’ll need a stock pot for boiling the pasta and a large sauce pan to make the alfredo sauce.


  • 9 Wedges of Weight Watchers Swiss Cheese or The Laughing Cow Creamy Swiss Cheese Wedges
  • 1 – Box of Ronzoni Garden Delight Penne Rigate Pasta
  • 1 – Package of Louis Kemp Imitation Crab, 6 oz
  • 1- Clove of Garlic
  • 1 1/2 – Cups of Skim Milk
  • 1/4 – Cup of Kraft Reduced Fat Parmesean Cheese
  • 8 – Sprays of I Can’t Believe It’s Not Butter Spray


  1. Begin by boiling water for your pasta
  2. Once up to a boil, add penne
  3. Cook for 8-12 minutes, or until pasta is tender to your liking
  4. Now you’re ready to make your sauce!
  5. Place 9 Weight Watchers or Laughing Cow Wedges in sauce pan on low to medium
  6. Add 1 and 1/2 cups of milk
  7. Grate your garlic into the sauce (I like to grate instead of chop because you get all the juices!  I just use a small hand grater to do this)
  8. Add in the Parmesan cheese and the butter spray
  9. Cook on low to medium until smooth and creamy – careful to keep stirring frequently
  10. Mix the pasta, crab, and sauce all together in a large bowl
