Recipe Of The Week: Red Pepper Pasta

To me, nothing is better for dinner than a great pasta dish!  Not to mention a creamy pasta dish!  I was excited when Philadelphia came out with their cooking cremes.  We have adapted nearly every flavor to some type of pasta dish.

This is a nice, easy pasta dish that you can prepare in little time.  Plus, Ronzoni Pasta and Philadelphia Cooking Creme….hello inexpensive meal!  (You can pick up Ronzoni pasta for FREE at Kroger this week, btw!)

To get started, you’ll need a large stock pot for boiling water and a fairly deep skillet pan for your sauce.  You’ll also need a cutting board for chopping up your vegetables.

  • 1 – Box Ronzoni Garden Delight Fettuccine
  • 1 – Tub Savory Garlic Philadelphia Cooking Creme
  • 2- Garlic Cloves
  • 1- Red Pepper
  • 1/2 – Onion
  • 2 – Cups of Spinach
  • 10- Cherry Tomatoes
  • Preparation

    1. Begin by washing your spinach, tomatoes, red pepper, and onion
    2. Next, dice up your red pepper, onions, and garlic into very small pieces
    3. Cut the cherry tomatoes in half
    4. Fill up your stock pot with water and set on high to bring to boiling
    5. Once boiling, add the pasta and boil to your liking.  Remove from heat and drain.
    6. Spray your skillet with non-stick cooking spray (you could use oil or butter, but that just adds points and/or calories!)
    7. Place spinach into skillet with a lid over it so that it can wilt down
    8. Once spinach is wilted, add your onions, red pepper, tomatoes and garlic cloves to the skillet
    9. Let the vegetable mixture simmer in the skillet until vegetables are tender
    10. Add the Philadelphia Cooking Creme to the skillet mixture and mix thoroughly until heated throughout
    11. Add the sauce to the pasta, mix, and enjoy!

This is another recipe that you can customize to your liking and what you have on hand.  Just remember that any changes will affect the nutritional information.
