Recipe Of The Week: “Fried” Chicken Legs

Probably the only way that I like chicken legs are if they are fried.  However, frying brings in a lot of fat, and sometimes mess as well!  Here is a quick and easy recipe for “fried” chicken legs that is simple and healthy!

If you don't have chicken legs on hand you can use any cut of chicken with this recipe.  However, any modifications can affect the nutritional information.

To get started, you'll need 2 small bowls for drudging the chicken, as well as a large baking pan.   You'll also need something to crush the Special K Flakes, so either a food processor, blender, or just a simple Ziploc bag and spoon.


  • 8 – Chicken Legs Thawed
  • 1 – Cup of Special K Original Flakes
  • 1/2 – Cup of Low-fat Buttermilk
  • 1 – Tbsp Ground Black Pepper
  • 1 – Tsp Ground Sea Salt
  • Preparation

    1. Preheat your oven to 400 Degrees
    2. Prepare Special K flakes by crushing in a food processor or in a Ziploc bag with a spoon
    3. Mix crushed Special K flakes with the salt and pepper
    4. Place Special K Flake mixture in a small bowl
    5. Place buttermilk in a small bowl
    6. Dip a chicken leg in the buttermilk then in the special k mixture
    7. Place chicken leg in a baking pan sprayed with non-stick cooking spray
    8. Repeat process with remaining legs
    9. Bake in preheated oven for 45 minutes
