Gift in a Jar: Cranberry Pecan Muffin Mix

As I mentioned a few weeks ago, my Aunt will be contributing posts from time to time. She's fantastic with homemade gifts so I asked her to share some of her favorites. Over the next few days, I'll be posting several posts from her Gifts in a Jar – hopefully you'll be inspired to make some of 'em!

The following post is from Aunt Mary…

For all of the Gifts in a Jar, you will need a Jar of any type. Mason Jars work well, or an old food jar. The ideal size is at least a quart to make sure all the layers show.

Cranberry Pecan Muffin Mix Gift in a Jar Ingredients

  • Jar
  • 3/4 cup, Chopped Pecans
  • 1 cup, Dried Cranberries
  • 1/2 cup, Light Brown Sugar (packed)
  • 1 3/4  cups, All Purpose Flour
  • 2 1/2 tsp, Baking Powder
  • 1/2 tsp, Salt

Layer the ingredients in your jar in the same order as they are listed above.  Pack down each layer gently before adding the next. Once complete, cover the jar tightly with a lid. Add fabric, attach directions to ribbon or raffia.

Directions for Baking

Make a copy of the baking directions below and place them on a card or paper and attach to the jar!

  • 1 Jar, Cranberry Pecan Muffin Mix
  • 3/4 cup, Milk
  • 1/4 cup or 1/2 stick, Butter (Melted)
  • 1 Egg (beaten)
  1. Preheat oven 400 degrees.
  2. Grease 12 regular-size muffin cups.
  3. Pour contents of jar into large bowl.
  4. Combine milk, butter and egg in small bowl. Stir into jar mixture just until moistened.
  5. Spoon evenly into prepared muffin cups.
  6. Bake 16 to 18 minutes or until toothpick inserted into center comes out clean.
  7. Cool for about 5 minutes and then remove from pan.
  8. Makes 12 muffins.

    I just made these – and they are delicious. I will say, that I only got 9, not 12. So I must have extra-large Muffin tins.

    I got all the ingredients into a 1 1/2 pint wide mouth mason jar (I got 12 at Target on sale).

    They are WONDERFUL!

  2. Made them last night and they were fine and good, but I would like to try again and make them less dense and more sweet. Would you suggest more sugar, or maybe white chocolate chips? And to make them less dense, more of the milk, butter, and another egg? Thank you ❤️
