Carnation Evaporated Milk | The Cooking Milk

One2One Network [1] contacted me to see if I would be interested in making a few dishes using Carnation milk. I have used Carnation milk before but didn’t really give thought to consciously preparing savory dishes with Carnation (I have always used Carnation for sweeter treats).

I received a few coupons and a gift card for ingredients and decided I would prepare a few dishes to test out a few friends for my Office Max A Day Made Better Party. I thought it would be a great way to see if they had thoughts on the taste difference (ya’ll were guinea pigs, did you realize that ;). I had a breakfast party and found a few recipes that called for milk.

The first dish I made was the Sunrise Sausage Bake from the Carnation Holiday Recipe Guide [2]. The only alteration I did with this was omit the peppers and add gravy on top (it was so goood).

To save on time, I decided to mix the eggs, Carnation, onion/garlic powder and green onions together the night before (and cover in the fridge). I also cooked the sausage the night before. I put it in a container in the fridge with a paper towel underneath to get excess grease off.

The morning of the party, I added the sausage to the egg mixture and added the bread to soak. This was a super easy dish to make and I’m sure I’ll make it again.

I also decided to make my classic French Toast Casserole. This is always a hit wherever I go. I prepared everything for this dish the morning of the party. You can find the recipe in this post [3]. The only alteration to this recipe was using Carnation instead of regular milk.

I noticed a difference in taste with this one. I can’t put my finger on what it was, but it seemed richer – in a good way. There were just a few pieces left when the party was over so it was a hit too!

I am curious, do you use Carnation or Evaporated milk in recipes instead of regular milk? I typically just use skim milk in everything but I definitely noticed a difference in these two dishes. I’d love to hear what kinds of recipes that you use evaporated milk instead of regular milk.
