Carnation Evaporated Milk | The Cooking Milk

One2One Network contacted me to see if I would be interested in making a few dishes using Carnation milk. I have used Carnation milk before but didn't really give thought to consciously preparing savory dishes with Carnation (I have always used Carnation for sweeter treats).

I received a few coupons and a gift card for ingredients and decided I would prepare a few dishes to test out a few friends for my Office Max A Day Made Better Party. I thought it would be a great way to see if they had thoughts on the taste difference (ya'll were guinea pigs, did you realize that ;). I had a breakfast party and found a few recipes that called for milk.

The first dish I made was the Sunrise Sausage Bake from the Carnation Holiday Recipe Guide. The only alteration I did with this was omit the peppers and add gravy on top (it was so goood).

To save on time, I decided to mix the eggs, Carnation, onion/garlic powder and green onions together the night before (and cover in the fridge). I also cooked the sausage the night before. I put it in a container in the fridge with a paper towel underneath to get excess grease off.

The morning of the party, I added the sausage to the egg mixture and added the bread to soak. This was a super easy dish to make and I'm sure I'll make it again.

I also decided to make my classic French Toast Casserole. This is always a hit wherever I go. I prepared everything for this dish the morning of the party. You can find the recipe in this post. The only alteration to this recipe was using Carnation instead of regular milk.

I noticed a difference in taste with this one. I can't put my finger on what it was, but it seemed richer – in a good way. There were just a few pieces left when the party was over so it was a hit too!

I am curious, do you use Carnation or Evaporated milk in recipes instead of regular milk? I typically just use skim milk in everything but I definitely noticed a difference in these two dishes. I'd love to hear what kinds of recipes that you use evaporated milk instead of regular milk.

  1. I use Carnation for anything that will be cooked. From Hamburger Helper to Deserts. If I am cooking it, it’s made with Carnation. :)

    1. Mandi, that’s good to know! I’m thinking of keeping a few cans on hand this winter to use more. It takes us a few weeks to go through a gallon of milk since we’re not big milk drinkers (unless in cereal) and I use it infrequently in dishes.

  3. I stocked up on Carnation last fall when it was free at Kroger’s. I had only used it in a couple of recipes before, and now I’m hooked. I’m down to about 5 cans and in a near panic!!!

    You can use the fat free versions to make healthier foods. I also love to use the regular in my mashed potatoes.

    If it calls for milk, I typically use Carnation. Dishes are so much better!

  4. Try using it when you make Kraft Mac and Cheese- it makes ALL the difference in the world, tastes so much richer and delicious!
