What does your pantry look like? No, I’m not going to ask for pictures. But, I will share pictures of mine!!

In June, I participated on a call with the Canned Food Alliance and their site, MealTime.org. I learned more about canned foods from food expert, Roberta Duyff, than I ever knew.

Did you know that canned foods with “no salt added” or juice (not syrup) are just as healthy as the fresh alternative? I always opt for reduced sodium in anything canned, but knowing that veggies without salt are just as healthy is encouraging. In fact, Mealtime.org has an entire section devoted to Canned Food Facts! While I do prefer fresh fruits and veggies, it’s good to have this resource!

Oh, and I also learned that canned fruits can make a mean smoothie!

I received a gift basket with many MealTime.org resources, including several recipe books. I was surprised to find a smoothie recipe. Now, it’s not like that is unheard of or anything, but I have honestly never purchased canned fruit for the ingredients in a smoothie. So, I did just that!

I put the canned peaches and pineapple in the fruit before I used it in my smoothie. They were nice and cold and I could drink it right away. It was delicious and using the juice (which I had a light juice, not syrup variation for less calories), meant I didn’t need to add any other juices so it saved me on an ingredient too!!

During the call, we talked about Freezing prepared items, which I have done before. But, I bet you could even take that canned fruit and pour it into ice cube trays. Then, it will be frozen when you go to make that smoothie and it no ice would be necessary! Sounds good, huh??

OK, off track there!!

I wanted to share my pantry pictures because I received a $100 gift card to use for new items to organize.

Honestly, my pantry and stockpile have organizational tools already, they are all just messy! I did purchase a container to hold all of our fruit snacks for the stockpile area (and removed them from the boxes). I also got a few new risers for the canned goods to sit on. I did a lot more tidying up than anything else. There is so much more room when it’s organized :)

    What a fantastic giveaway! MealTime is a fantastic resource, too. I love black beans and always have them in my pantry. I found several black bean recipies that look wonderful on the site, but the Black Bean Tostadas really appealed to me. I”m making it tonight!

    A meal that I can always make is chicken tortilla soup. I use canned chicken, hot sauce, chicken broth, tortilla strips, and rotel. Throw it all together and you have a quick and easy meal!

    Linguini with a sauce of chopped clams and mushrooms, garlic powder and a little olive oil; italian green beans with tarragon, and tropical fruit smoothies using 1 can of tropical fruit with juice and 1 can evaporated milk. (All canned, of course.)

    Okay from my pantry. This is actually what we are having tonight for dinner– spaghetti squash, baked and then the “spaghetti” removed. Make sauce (can tomato sauce, can tomato paste, oregano, basil, garlic, salt and pepper, can of mushrooms, a smidge baslalmic vinegar) and serve like the pasta dish. I will make rolls from scratch and serve them on the side. I think I will also serve green beens as a side.

    I always keep soup ingredients on hand. They serve as my backup for whenever the meal plan falls through, for surprise guests, or if we are providing a meal for someone at church. Right now I could make vegetable soup, lasagna soup, or enchilada soup. Assuming I could find everything. Would LOVE to win this.

    When we need to stretch a buck, or I haven’t had time to go to the store we have Black Beans and Rice… which can be stretched to two meals.

    Simmer 2 cans of Black Beans in half a can of Chicken Broth, with either a can of diced green chilis or if you want spicey, add half a small can of jalapeno’s.

    Pour over Rice… with a dollop of salsa on top. Open a can of corn to serve with it.

    Also, I subscribe via google reader.

    The next day I mix the corn, salsa, black beans and rice together and use it as a hearty dip for Chips. Or I’ll put a giant scoop on a bed of lettuce with some tortilla strips for a delicious salad.

    One of my favorites (especially in cooler weather) is vegetarian chili, which uses lots of canned goods. Just combine 2-3 cans of your fave beans (pinto, kidney, black) with a can of diced tomatoes. Season with chili powder and cumin and heat until boiling, then turn down heat and simmer for about 15-20 minuties.

    Serve with corn muffins (mix up from a box).

    Something my family loves and everything comes from the pantry is Macaronni & Cheese with peas and tuna fish. I simply preparer the mac & cheese according to package directions then drain a can of peas and a can of tuna then toss them in with the mac & cheese, stir, and server. They love it!

    I love to make red beans & rice w/sausage. Use 2 “discount” boxes of Zatarain’s rice mix & free kelbasa sliced into bite sized pieces. Start it in the microwave & finish in the oven. Green “Steamers” frozen vegetable for a side & some jiffy corn bread made into mini cupcakes or bisquick biscuits. Of course free Crystal light to drink; all served on dixie or chinet plates (free) so cleanup one night is a breeze & I can spend more time w/my family.

    I could make Spaghetti & Meatballs. I always have jarred sauce and spaghetti in my pantry. I have meatballs in my freezer. Whenever I find bell peppers reduced at Jungle Jims I buy extra, dice them up and freeze them to add to anything. With some homemade bread that I usually have the ingredients for, we have dinner!

    We actually did this tonight when my husband ever so bluntly explained to me that he’d eaten what I had planned for dinner at lunch and wanted something different *sigh*

    Luckily it turned out well…we had tuna noodle casserole (boxed tuna helper with 2 cans of tuna) and biscuits with canned mandarin oranges. We added vegetables from the garden to the “helper” to fill it out a bit…

    My Favorite pantry recipe is Enchilada Bean soup which can be heated on the stove in about 15 minutes or thrown in the crockpot in the morning. Combine One can diced tomatoes, one can black beans, one can garbanzo beans, one can kidney beans and one can white northern beans (or any combination you prefer) one small can tomato sauce, one pkg enchilada seasoning mix, one cup of canned pureed pumpkin and one cup of water. Heat and serve with sour cream or cheddar cheese and cornbread muffins.

    Quick Curried Tuna:

    One can of tuna, cream of mushroom soup, teaspoon of curry powder, any veggies ( I like mushrooms, onions and peas). Pour over biscuits and you have a tasty and unique meal. One of my 15 minute favs.

    I have the same shelving units for my pantry, but with all the good deals I have been able to snag lately they were overflowing and it was getting hard to organize everything so I could see it all. Luckily my mom had TWO wooden cupboards that she said I could have! So I have been able to organize (and separate my food from household products).

    My family likes breakfast for dinner sometimes so we always have pancake mix and syrup on hand. It’s a great fall back and a quick easy meal. Plus I just found this great idea to making pancakes quickly. Instead of making a few at a time on a griddle, I use my mini muffin tins (which I have 2) and bake them in the oven. I can make 48 mini pancake muffins in like 10 minutes and we are ready to eat!! The kids love them because they are just their size!

    Believe it or not I have almost everything to make THREE CHEESE CHICKEN FLORENTINE CASSEROLE RECIMEAL. It sounds so good. Only thing I’m missing is spinach, and I’d substitute canned mushrooms that I have on hand.

    Hi! Great idea. I call this green bean casserole. IN an electric skillet, brown 1 lb. of hamburger/turkey. Mix in one can of tomato soup (don’t add water). Add a layer of canned green beans on top of the meat (I use two cans). Prepare of instant mashed potatoes (I use two packets) as directed. Add the mashed potatoes in a layer on top of the green beans. Sprinle some cheese on top and let melt. HUGE hit with the kids and my husband.

    After reading this last night I realized I hadn’t made dinner yet nor figured out what we were going to have. We ended up with Ham (out of freezer) scalloped potatoes (out of pantry) salad (out of fridge) with peas (out of stock pile).

    I laughed when this question was asked because I did this just last week!. My daughter had a friend sleepover, the next morning I wanted to make breakfast, but had no breakfast meats in house. So…off to the trusty pantry where we had biquick for pancakes, plenty of syrup and then off to the freezer where I had frozen blueberries(I buy them when they are cheap and freeze). We had the best blueberry pancakes ever!

    We love the whole concept of using what is in your pantry to make a meal. That is our Sunday night ritual. Many of our meals include black beans, so the black bean tostida’s sound really good on mealtime.

    I can make the Chicken Fried Rice, but not like the recipe says. I found the Knorr Rice Sides while my hubby was deployed a couple years ago. We usually do two rice packets and one Keobasa and there is dinner in under 45min or so.
    I have a rotesseire chicken that was given to me. Cut that up and put in with the rice. Or make spagehhti and meatballs.

    tonight we’re having spaghetti with (vegetarian) meatballs from the freezer. The sauce & meatballs are simmering in the crockpot now. yum!

    But my pantry always has potatoes & jarred cheesy pasta sauce, and the freezer always has chopped broccoli to make broccoli-cheese-baked potatoes. served with soup or a salad–even fruit salad from the pantry, it makes a great weeknight meal!

    I didn’t think I had much to prepare from foods in my pantry already at home, but after thinking about it…I surely do! I think a fave would be a pasta dish with some sauce and veggies. Quick and easy during a weeknight and is even good reheated for lunched during the week. Thanks for getting me thinking about using up what I alrady have on hand! :)

    I have a good stockpile and always like to make a few favorites in case of an Emergency Meal Situation (EMS).

    When the EMS 911 occurs, send out the all points bulletin and make your way quickly to the nearest pantry.

    You will be a meal hero when you save the day by just pulling out a box of elbow macaroni, a couple of cans of tuna, a can of peas or frozen peas, and Miracle Whip.

    Boil the noodles, drain the tuna and the peas and then mix it all up with the Miracle Whip. Add some pepper and some dill weed spice or celery seed if you have it and this makes a great quick meal. The tuna casserole can be eaten hot or cold, it’s your choice.

    So off to defend other emergencies, the Super Momma conquers hunger again!

    I like to keep the stuff on hand for many several different types of chili. When the weather starts getting cooler, my mom loves a bowl of warm chili and a couple of crackers. Plus, there are so many variations to try. Tonight we could have White Chili or just our normal way of using kidney beans, ground beef or ground turkey, tomato sauce, green peppers, and ketchup; sometimes, we will throw in canned stewed tomatoes, too. Yum!

    I could make the 3-Bean, 3-Alarm Chili – although I have the green pepper, onion, and garlic in dried form in my pantry, I also have the “real” condiments in my fridge, so would use them. Although I don’t have the cheese in my pantry, I do have lots in my freezer :)

    I always have the making for a quick Alfredo something – today it could be chicken, spinach & red pepper. An easy quick meal that can slide some extra veggies in without the kids realizing it.

    I have a casserole that I could make easy. Just take a can of beans (I prefer garbanzo), a box of stuffings, and a can of chicken. Layer the chicken on the bottom of the pan. Mix the stuffing together with the undrained beans. Layer that on top of the chicken. Top it all off with a layer of cheese. Then pop in the oven for about 30 minutes at 350. Serve with a side of canned veggies (I prefer green beans) and voila! You have dinner!

    Our pantry is always pretty well stocked, we shop more than we eat! Always looking for bargains and stacking coupons, we get a good stockpile.

    The easiest and fastest would be a tuna casserole. We like to put noodles and peas in ours. We love tuna patties as well. I also have a good supply of beans, that we can use as protein for all kinds of meals.

    Thanks for a fantastic giveaway. It doesn’t get much more useful than this :)

    Well, I only go shopping once a month or so. Which means I’m great at substituting items when I run out of thing before my monthly shopping trip. At any given time I make all sorts of meals direct from the cuppard. Last night we had Chili. I used all sorts of fresh veggies from the garden… it was amazing! My kids even ate it!

    Tonight I’m making something from items in my pantry and fridge: cooked rigatoni, jarred spaghetti sauce, cooked ground beef, Parmesan cheese. Just mix together and top with shredded mozzarella; bake for 45 min. @ 350. Super easy and super good.

    I always keep ingredients for a quick veggie stirfy in the pantry – a bag of frozen mixed veggies (broccoli, carrots and cauliflower), can of sliced mushrooms, can of water chestnuts…sautee in soy sauce, season with ginger, a little red pepper flake, sesame seeds, serve it over either rice or whole wheat thin spaghetti!
