Swanson Picnic Basket

This giveaway is just.plain.FUN!!!

I received an awesome basket from Swanson to help me with my summer entertaining. And, when I say basket, I really mean a basket!

Do you have a picnic basket? I never did so when I opened up this package, I was soooo excited! Even better, this beautiful basket came FILLED with the necessities for a family picnic! That, my friends, is called DETAILS!

One of the yummy recipes in the basket (YES, recipes are included too) was something I had been wanting to make for a while. I have made a similar version of the Cool Chicken ‘n’ Pasta Salad but without chicken. Adding in the chicken was a good source of protein and made it a balanced lunch. I guess that just goes to show you, you can do more with Swanson Chicken than the Buffalo Chicken Dip (that’s my standby and I could eat it everyday!!).

Cool Chicken ‘n’ Pasta Salad

3 Cups Cooked Pasta (elbow or corkscrew)
2 Cans Swanson Premium White Chunk Chicken Breast
1 Small Cucumber, sliced
1 1/2 Cups Cherry Tomatoes, cut in half
1 Small Onion, chopped (I omit this)
3 Tbsp Fresh Parsley, chopped (I used dried)
3/4 Cup Fat-Free Italian Salad Dressing

I also added a few hard boiled eggs, but the recipe didn’t actually call for it. You just toss all of these goodies together and stick in the fridge to chill for at least 30 minutes. I like my pasta salad nice and cold!

    Love it! I so want to go on a picnic now.
    Here is a recipe my family enjoys:

    Chicken Terrezini

    1/2 pkg. thin spaghetti broken into small pieces (1-2 inch pieces)
    1 can cream of chicken soup
    1 large can of Swanson chicken shredded
    2 large serving spoonfuls of sour cream
    1/2 pound fresh mushrooms (optional)
    1/2 cup shredded cheddar cheese

    Saute mushrooms in small amount of butter add chicken, cream of chicken soup and sour cream.

    Cook spaghetti( that has been broken into bite size pieces). Cook according to package directions. Drain.

    Place all together in 9 x 13 pan sprayed with Pam. Sprinkle with grated cheddar cheese on top.
    Bake 350 for 30 minutes

    I use the Swanson chicken with a little bit of Miracle Whip and some fresh fruit to make a chicken salad. I love it with grapes but have often used strawberries or peaches. It just depends on what’s in the house!

    Oh man I love the buffalo chicken dip also!!!
    But another way to use the swanson canned chicken is to shred it up add cole slaw dressing and it makes a yummy chicken salad. You can add what ever else you like….grapes, sliced almonds, celery. But it is yummy using the cole slaw dressing!!

    Mix one can chicken, 1 cup shredded cheddar cheese, a can of (healthy request) cream of chicken soup, and 1 T dried parsley.

    Press canned biscuits in the bottom of sprayed muffin tins. (This makes 12, I think.) Press them in so they make a little bowl. Spoon the filling into the bowls (it makes too much filling usually). Bake for the necessary time to cook the biscuits.

    YUM YUM!

    I would make the cool chicken and pasta salad, minus the onion and add some fresh apples and almonds or pecans, and maybe some craisins. I love to mix the sweet stuff in with my homemade chicken salad, not to mention its good for you.

    I want this sooooo bad!

    One of our favorite ways to eat Swanson chicken is to make NO COOK Chicken Tortilla Wraps.

    1 (5-6 3/4 oz.) can chunk style Swanson chicken
    1/2 of sm. cucumber chopped up finely
    1 sm. tomato chopped
    1/2 c. shredded Cheddar or Swiss cheese
    3 tbsp. buttermilk or ranch salad dressing
    4 (7″) flour tortillas
    1/2 c. shredded lettuce

    Drain chicken. Shred apart with fork. Mix all together well and spread in center of tortillas, then fold. Wrap individually in plastic wrap or foil and throw into that picnic basket! :)

    Quick and easy! The perfect thing to take on a picnic in this picnic basket.

    I use the canned chicken to make chicken rolls. Take 1 can of cresent rolls, flatten each roll and place a spoonful of chicken and 1/2 a slice of cheese in each and roll up. Place in a casserole dish. Mix 1 can of cream of chicken soup with 1 can of milk. Pour over the top and bake at 350 degrees for 30-45 minutes. This recipe is so good!!!

    I love to mix it wit mayo & onion for chicken salad sandwiches or for dinner toss in a little oil & flour, lightly brown, mix in a can of cream of chicken soup & 8oz of sour cream, heat thoroughly & serve over bisquits or even mashed potatoes – delicious :)

    This is a recipe I make when I’m too tired to cook a fancy family meal, but I still want to eat/serve something special:

    1/2 onion, diced
    clove or two of garlic, minced
    2 carrots, peeled, sliced into thin coins, and microwaved for 3 minutes in a little water
    1 can garbanzo beans, drained and rinsed
    1/2 can pitted black olives
    1 roasted red pepper (from a jar is ok), diced
    about a cup of green veggies of your choice, cooked – leftovers are a star here
    1 or 2 cans of Swanson chicken
    8 oz. Swanson Chicken broth
    1 cup cous cous
    olive oil, salt, pepper, parsley, basil, whatever you like

    Sautee onion in olive oil in large pan until soft; add all the other veggies and sautee on low heat for about 10 minutes.

    In a small pot, combine the chicken and stock and bring to a boil – keep hot.

    Add the cous cous and seasonings to the veggies, stir to mix well. Add the chicken and stock, cover pan and remove from heat. Let sit for 5 minutes.

    Fluff with a fork, dress with a little more olive oil, and serve with pita bread.

    Easy Chicken Pita Sandwiches
    30 Minutes or less
    From: Campbell’s Kitchen
    Prep: 10 minutes
    Serves: 4

    Ingredients:

    2 cans (4.5 ounces each) Swanson® Premium White & Dark Chunk Chicken in Water, drained
    1/2 cup reduced fat or fat free creamy ranch salad dressing
    4 pita breads (6″), cut in half forming 2 pockets
    8 tomato slices
    8 lettuce leaves

    Directions:

    Mix chicken and dressing.

    Divide chicken mixture among pita halves

    Top with tomato and lettuce

    Make one package of pasta according to directions. Mix cooked past (we like rotini), one jar nacho cheese (with the peppers in it) and one can drained chicken. Sounds odd, but so yummy!

    What a fun giveaway. I like to make Chicken salad with swanson chicken. the big can.

    I use 3 boiled eggs. 1 can of chicken drained. 2 teaspoons sugar. 2 teaspoons vinegar. 2 teaspoons yellow mustard. 3-4 Tablespoons Mayonnaise. 1/2 teaspoon salt.

    separate the yolks from the whites. chop the whites and crush the yolks.

    in a bowl, mix the sugar,salt,vinegar,mustard and mayo. whisk, add the yolks and whisk again. should be watery. taste for seasoning and add salt or vinegar if it needs it. add the chopped egg whites and the drained chicken, mix and serve on fresh wheat bread :-)

    I make Chicken Broccoli Croissants. Kind of like hot pockets! I mix the chicken, ranch dressing, Monterrey jack cheese, and cooked broccoli together. Fill up a croissant, roll them up, and bake for the amount on the roll. My husband love them!

    We love to make finger rolls with Swanson Chicken. Just add Hellmans mayo, chopped celery and chopped onion. Add a half slice of sandwich cheese and top with paprika. Oh, and my son slides a Stacker dill pickle into his! Thanks!

    I make a delicious hot chicken dip with Swanson chicken.

    3 blocks of cream cheese
    1 can of cream of chicken soup
    2 10 oz. cans of chicken
    Sliced jalapenos to taste

    Drain 1 can of chicken and use juice from other. Use as many or as little jalapenos as you wish. Mix above ingredients and put into crockpot. Melt and serve with tortilla chips.

    Also, here’s another recipe we frequently use: try angel-hair noodles with lettuce, shredded cabbage, julienned carrots and cucumbers, chow mein noodles, and Swanson chicken. Use a ginger soy or other asian dressing. Very good!

    I make my pasta salad with rainbow rotini, diced onion, chicken (or tuna), frozen peas, a drizzle of oil and a fair amount of a seasoning like Mrs. Dash. It’s good warm or cold.

    This basket is so cute! I like to make chicken salad and then stuff the salad into ripe tomatoes (slice the tomato like a star on the top, but don’t go all the way through the tomato). This is a light and refreshing lunch or dinner meal.

    Chicken and Dressing Casserole

    1 large can of chunk chicken
    1 stick butter (I use about half and add a little water)
    1 can of cream of chicken soup
    1 box of Stove Top cornbread dressing

    In a 2-quart casserole, melt the butter in microwave. Add the rest of the ingredients and stir well. Microwave on high for about 5 minutes. Stir again and microwave on high for another 3 minutes. (I recommend either using the lower sodium stuffing or making your own cream of soup, because otherwise it’s a little salty for me.)

    My family loves this and it is so easy and doesn’t heat the oven. Although the recipe calls for canned chicken, I have also used leftover chicken.

    A recipe I would make with the canned chicken is chicken nachos.
    1 large can chicken
    1/2 packet taco seasoning
    olive oil
    tortilla chips
    lettuce
    salsa
    shredded cheese
    sour cream
    couple chopped garlic cloves
    1/4 c chopped onion

    Saute onion, garlic in olive oil. Add chicken and taco seasoning and heat for a couple minutes. Put tortilla chips in 8×8 baking dish, add chicken mixture on top, 1/2 jar salsa, and cheese. Put in oven under broiler to melt cheese. Serve with lettuce and sour cream.

    I simply mix the chicken with some spices, cheese and salsa. I put a few tbsp into rolled out crescent dough, roll up and bake!! serve w/ extra salsa or sauce and perfect apps!!

    I love swanson!!!!! My favorite recipe to make with their chicken is Chicken Enchiladas

    2 cans chicken
    1 can cream of mushroom soup
    1 can cream of chicken soup
    1 can filled with milk
    1 small onion sauteed
    2 tbsp. diced jalapeno (optional)
    8 flour tortillas
    1 8 oz bag of mexican blend cheese

    In a sauce pan sautee the onion and then combine with chicken and jalepeno and warm through. In a good sized fry pan combine soups and milk warm through.

    Pre heat oven to 350, dip one tortilla in the soup mixture, place in pan and add about 2 tbsp of the chicken mixture to one side of tortilla and roll up, continue untill all tortillas are done. Pour remaining soup mixture over the tortillas and top with cheese! Bake for about 30 minutes or intil bubbly and brown! I serve with sour cream and salsa!

    I would make my Easy Chicken Pot Pie Recipe.. Take the can of Swanson Chicken, add…. a couple of diced boiled potatoes, and carrots, dump in a can of drained peas, and green beans, Add a can of cream of chicken soup, I always heat these ingredients up together on the stove and add a little chicken broth if needed. Pour into a Baking dish.. Top with Pillsbury biscuits cut into small pieces. Bake for approximately 30 minutes until bubbly hot and biscuit top is brown.

    It is yummy!

    I would love to use Swanson Chicken to make a Classic Chicken Casserole with Cream of Chicken Soup, Swanson Chicken of course, a little onion, sharp cheddar cheese, mushrooms, peas, a little sour cream and extra wide noodles. I would put it into the oven with a little original breadcrumbs on top and bake it until golden brown.     Honestly I have never tried canned chicken until this year when we were at a friends for a party, they made the Buffalo Chicken Dip (canned chicken, cream cheese, shredded cheese and tabasco sauce).     Here’s my recipe:
    Mexican Pasta Salad

    6 oz uncooked macaroni
    2 cans swanson chicken, drained
    ¼ cup chopped red onion
    ¬Ω lb halved cherry tomatoes
    2 5oz cans sliced black olives
    3 tbs fresh chopped cilantro
    ¾ cup defrosted frozen corn
    ¼ cup chopped bell pepper
    Dressing
    1 tsp crushed red peppers
    ¬Ω tsp salt
    4 tbs lime juice
    1 tbs corn oil
    2 tsp sugar

    Cook pasta according to pkg directions.
    Mix all other salad ingredients.
    Whisk together all dressing ingredients.
    Combine, toss and serve

    Okat, this has got to be the easiest recipe ever and did I say super fast!! My family loves it!

    BBQ Chicken Sandwiches

    2 cans chicken
    1/2 – 1 bottle BBQ sauce of choice
    Hamburger buns

    Drain chicken from can, lightly brown in sauce pan, add bbq sauce until desired consistency (as it heats it will get thinner). Heat through. Put mixture on buns and serve.

    We add coleslaw on top of ours, it makes it more like a Carolina pulled BBQ sandwich.

    I would make a chicken rice bake. Chicken, cooked rice, broccoli, mix all together put in casserole dish and cover with cheddar cheese. Put in oven until cheese topping melts.

    Very cute basket. Here’s my favorite Swanson chicken recipe. It’s easy to do too… especially on the grill.

    Chicken Quesadillas

    1 can Campbell’s Condensed Cream of Chicken Soup
    1 teaspoon chili powder
    1/2 cup shredded Cheddar cheese
    2 cans Swanson Premium White Chunk Chicken Breast in Water
    8 flour tortillas

    Preheat oven to 425°F.

    Mix soup, chili powder, cheese and chicken.

    Spread about 1/4 cup soup mixture on half of each tortilla to within 1/2″ of edge. Moisten edge with water. Fold over and seal. Place on 2 baking sheets.

    Bake for 10 min. or until hot. Makes 8 quesadillas.

    I use swanson chicken to make:
    Easy Cheesy Chicken Enchiladas

    INGREDIENTS
    • 1 (8 ounce) package cream cheese
    • 1 cup salsa
    • 2 cups chopped cooked chicken breast meat
    • 1 (15.5 ounce) can pinto or black beans, drained
    • 9 (6 inch) flour tortillas
    • 2 cups shredded Colby-Jack cheese
    • 1 can Enchilada Sauce

    DIRECTIONS
    1. Preheat the oven to 350 degrees F. Lightly grease a 9×13 inch baking dish.
    2. In a small saucepan over medium heat, combine the cream cheese and salsa. Cook, stirring until melted and well blended. Stir in chicken and pinto or black beans. Fill tortillas with the mixture, roll and place into the prepared baking dish. Pour enchilada sauce over the top and spread with a spatula. Sprinkle cheese over the top. Cover with aluminum foil.
    3. Bake for 30 minutes, or until heated through. Garnish with your favorite toppings such as lettuce and tomatoes, or sour cream.

    Hi! I have a great recipe! Chicken Crescent Rolls

    3 ounces cream cheese
    3 tablespoons butter or margarine
    2 cans of Swansons chicken, 9.75oz cans
    1/4 teaspoon salt
    1/8 teaspoon pepper
    2 tablespoons milk
    1 tablespoon green pepper, , optional
    1 can crescent rolls
    3/4 cup croutons, seasoned, crushed
    8 ounces cheddar cheese, shredded

    Blend cream cheese and 2 tablespoons butter. Add next 5 ingredients. Divide crescent dough into 4 rectangles. Place chicken mixture in center. Put cheese on top of chicken mixture. Cover chicken with dough (corner to corner). Brush with remaining butter. Top with crushed croutons. Bake at 350 for 20-25 minutes.

    I’ll post this giveaway on my blog to help cross promote your site. As well let me share this easy recipe which might be made with Swanson Chicken:

    1 8 ounce box spaghetti cooked per directions
    1 can Swanson chicken
    1 8 ounce container of fresh sliced mushrooms
    1 small onion, finely minced
    1 cup of tomatoes, diced (I use canned)
    a pinch of cayenne pepper
    salt and pepper to taste
    4 ounces shredded sharp cheddar

    Cook onions and mushrooms in a small amount of oil until just tender. Add tomatoes, chicken and seasonings. Heat through. Toss in spaghetti and mix well. Pour into a greased casserole dish. Heat oven to 350F. Top casserole with shredded cheddar and bake until cheese is melted and casserole is bubbly, about 15-20 minutes.

    I usually use this recipe when I make Chicken Pot Pie. My children love it!!

    Chicken pot pie

    From: Campbell’s Kitchen
    Prep: 20 minutes
    Cook: 40 minutes

    Serves: 6

    Ingredients:
    1 package (15 ounces) refrigerated pie crust (2 crusts)
    1 can (10 1/2 ounces) Campbell’s¬Æ Chicken Gravy
    3 cups cooked cut-up vegetables *
    2 cans (4.5 ounces each) Swanson® Premium White Chunk Chicken Breast in Water, drained

    Directions:

    Let the pie crusts stand at room temperature for 15 minutes or until they’re easy to handle. Place 1 pie crust into a 9-inch pie plate.

    Stir the gravy, vegetables and chicken in a medium bowl. Spoon the chicken mixture into the pie plate. Place the remaining pie crust over the filling. Press the edges to seal. Cut several slits in the top crust.

    Bake at 400°F. for 45 minutes or until the crust is golden brown.

    *Use a combination of sliced carrots, peas and cubed potatoes.

    I have been making this easy chicken and noodles ever since my children were toddlers. They are 28, 27 and 25 now. It is just plain comfort food, with all pantry ingredients.

    1 can Swansons chicken
    2 or 3 cans Swansons chicken broth
    about 2 cups of dry egg noodles.
    Just bring the broth to a low boil, cook the noodles in the broth. Then add the chicken and heat through.
    Add sliced carrots, frozen peas and corn if you like, but they are not essential.

    Chicken Salad is my favorite. Mix the chicken with miracle whip, and some dill relish. Get two slices of toast put some of the chicken salad one side, cover with the other. Enjoy. It’s quick and simple yet yummy.

    We make a crockpot meal with swanson broth, chicken breasts, celery, mushrooms and a little soy sauce over rice. It is yummy.
