OK, so my girlfriends at onceamonthmom.com ^[1] really inspired me to do something to stretch my family’s money – do some once a month cooking! If you haven’t checked out their site yet, please do, there are so many resources to help you cook once a month and stretch your shopping dollar!!

I don’t have the freezer space to do the full-blown once a month cook that Tricia and Cortney lay out (the March Menu is now up here ^[2]). Our extra (third) freezer died and we have a quarter of a cow occupying the space in the small freezer so no room for the many meals until we get a new one (and when I get a cooking buddy). So, I decided to focus on something small that would help out family get by for breakfast…and, I made some muffins (and will do waffles this week) :-) This just goes to show you that you can do once a month cooking however it works for you.

So, I made the muffins from the February Menu ^[3]. I actually had dinner (Upside Down Pizza ^[4]) on the stove as I was mixing up the batter so I was multi-tasking (I got mad skillz like that :-). The batter smelled so good I wanted to lick the spoon! Well, I did actually get a lil lick of the batter that splatted up on my cheek :-). Anyhoo – as they were poured into my muffin pans:

And, the finished product cooled and into my freezer bags for at least 6 days of breakfast for our hungry clan! Well, Andon loves these so they may not last too long since I caught him moving the chair over to the stove and grabbing two – he was double fisting them! They are so good thawed out too – still moist and have the perfect flavor! I’m a believer, girls :-)
